Bœuf croustillant au caramel et au poivre

Je vous propose ma recette de bœuf croustillant au caramel et au poivre. La viande reste croustillante grâce à une astuce que j’ai découvert au Vietnam, même si cette recette est beaucoup plus inspirée par une que j’ai dégustée en Chine. La sauce est délicieuse à souhait, sucrée et bien poivrée. À chaque fois que je fais cette recette, les gens sont surpris par la texture incroyable et la saveur inimitable. C’est toujours un succès lors d’un diner. À vous de jouer !

  • Vous allez pour cette recette, avoir besoin de faire un caramel à sec. Pas de panique, c’est très facile ! Placez le wok (ou une poêle) sur feu assez soutenu. Versez un quart du sucre.
  • Secouez le wok pour étaler le sucre.
  • Il va commencer à fondre. Vous pouvez baisser le feu ou l’augmenter au besoin.
  • Quand tout a fondu, versez un quart supplémentaire.
  • Secouez de nouveau pour bien l’étaler.
  • Faites de même jusqu’à avoir fini d’ajouter tout le sucre. Vous devez obtenir un joli caramel.
  • Versez alors l’eau.
  • Le caramel va cloquer en dessous.
  • Laissez chauffer jusqu’à ce que tout le caramel soit dissous. Ajoutez alors les gousses d’ail écrasées dans un presse-ail. 
  • Ajoutez le nuoc mâm, la sauce de soja.
  • La sauce d’huitre. Laissez cuire 3-4 minutes. Poivrez bien, car c’est l’idée de la recette !
  • Versez la farine de riz dans un petit bol. 
  • Versez un peu d’eau, de quoi pouvoir dissoudre la farine.
  • Mélangez bien puis versez dans la sauce. Mélangez tout de suite le contenu du wok.
  • Portez à ébullition sur feu plus doux. La sauce va épaissir.
  • Pour la viande : enlevez le gras. 
  • Je prends pour cette recette, un attendrisseur à viande. C’est très efficace.
  • Si vous en avez un, piquez la viande sur toute sa surface, des deux côtés.
  • Puis coupez-la en morceaux de la taille d’une bouchée.
  • Versez-la dans un récipient avec les blancs d’œufs. Salez, poivrez, versez deux trois bonnes pincées de sucre et de 5 parfums. 
  • Mélangez bien. Versez une bonne dose de fécule de tapioca dans un autre récipient.
  • Faites tomber les morceaux dans la fécule d’une main, et de l’autre enrobez-les de fécule.
  • Faites de même pour tout la viande. 
  • Laissez reposez 10-15 minutes. Faites chauffer un wok (ou une casserole) d’huile à 180°C. Versez une partie de la viande et laissez les morceaux se colorer.
  • Quand c’est le cas, enlevez-les de l’huile et laissez-les de côté pendant que vous faites frire la suite.
  • Quand toute la viande est cuite, versez-la dans le wok de sauce bien chaude.
  • Chauffez sur feu doux et enrobez-les bien.
  • Servez immédiatement avec un riz blanc et un peu de poivre !

I offer you my recipe for crispy beef with caramel and pepper. The meat stays crispy thanks to a trick I discovered in Vietnam, even if this recipe is much more inspired by one I tasted in China. The sauce is delicious, sweet and well peppered. Every time I make this recipe, people are surprised by the incredible texture and inimitable flavor. It’s always a hit at a dinner party. It’s up to you! 

INGREDIENTS:

  • 400 g beef entrecote
  • 2 egg whites
  • salt
  • pepper
  • sugar
  • 5 fragrances
  • tapioca starch


Caramel and pepper sauce: 

  • 140 g sugar
  • 340 ml water
  • 2 cloves of garlic
  • 1 c. nuoc mâm coffee
  • 4 c. coffee soy sauce
  • 4 c. coffee oyster sauce
  • ground black pepper
  • 4 c. coffee rice flour

INSTRUCTIONS

For this recipe, you will need to make a dry caramel. Don’t panic, it’s very easy! Place the wok (or pan) over fairly high heat. Pour in a quarter of the sugar.
Shake the wok to spread the sugar.
It will start to melt. You can turn the heat down or up as needed.
When everything has melted, pour in an extra quarter.
Shake again to spread it out.
Repeat until all the sugar has been added. You should get a nice caramel.
Then pour in the water.
The caramel will blister underneath.
Let heat until all caramel is dissolved. Then add the crushed garlic cloves in a garlic press. 
Add the nuoc mâm and the soy sauce.
Oyster sauce. Let cook for 3-4 minutes. Pepper well, because that’s the idea of the recipe!
Pour the rice flour into a small bowl. 
Pour in a little water to dissolve the flour.
Mix well and pour into the sauce. Stir the contents of the wok immediately.
Bring to a boil over low heat. The sauce will thicken.
For the meat: remove the fat. 
I use a meat tenderizer for this recipe. It is very effective.
If you have one, prick the meat all over on both sides.
Then cut it into bite-sized pieces.
Pour it into a bowl with the egg whites. Add salt and pepper, and two or three good pinches of sugar and 5 flavors. 
Mix well. Pour a generous amount of tapioca starch into another container.
Drop the pieces into the starch with one hand, and with the other coat them with starch.
Do the same for all the meat. 
Leave to rest for 10-15 minutes. Heat a wok (or pan) of oil to 180°C. Pour in some of the meat and let the pieces brown.
When they do, remove them from the oil and set them aside while you fry the rest.
When all the meat is cooked, pour it into the hot sauce wok.
Heat over low heat and coat well.
Serve immediately with white rice and a little pepper!

Vu que je n'avais pas envie de me retrouver avec un ingrédient que je ne réutiliserais peut-être pas, j'ai remplacé la fécule de tapioca par de la fécule de maïs, ça croustille aussi !
