Cane Sugar Shortbread

Another shortbread recipe? Yes, because I will never be without it. I love to test and when I find a combination that works, I can’t wait to put it online. Especially with Christmas coming up, it’s time to get the kids making shortbread. Because they love to get their hands dirty and then cut pretty shapes. So I give you this recipe which contains real dark cane sugar (a certain percentage) and is really delicious. You already have a choice of shortbread on my blog: crispy, crumbly, crunchy, more flavored … 

Shortbread recipe

-200g butter
-200g of white caster sugar
-40g of cane sugar
-360g flour
-30g milk powder
1/8 teaspoon baking powder (as always, I use the American spoons)
-80g of egg (just beat and weigh)
-2 teaspoons of water.

Put the white sugar, cane sugar (in organic stores), milk powder, flour and yeast in the bowl of a blender.


Mix well then add the cold butter cut into pieces. 


Mix with the “K” of the kitchenaid or kenwood. 


The mixture should be sanded. Add the beaten egg and two teaspoons of water.


Stop mixing as soon as the dough is formed. 


Shape shortbread: no matter which method you choose. You can roll out the dough and then cut with cookie cutters. Brush on a little skim milk.


Then cook for 15 to 20 minutes at 180°C. It all depends on the oven and the thickness of the shortbread. 


Let cool on a rack and put in an airtight box without waiting to protect from the ambient humidity.
