What better way to enjoy a summer snack than with a delicious slice of cake? For the kids, these will be delicious memories, and you too will enjoy making and tasting them. I made you the ultimate pound cake (recipe HERE) about a year ago and this time I deviated a bit from the basic recipe to add almond powder and chocolate chips that don’t fall to the bottom. Very simple to make, the result is just like I love it: clean and soft slices. Just make sure you prepare it the day before to get that perfect result. I bake it in a low oven for longer and let it sit in the fridge overnight before I pounce on it!!! 

Recipe for a 23cm pan:

  • 310g of flour
  • 6g of baking powder
  • 60g of almond powder
  • 250g of egg
  • 250g of brown sugar
  • 250g of semi-salted butter
  • 180g of chocolate chips
Place the flour, baking powder and almond powder in a bowl or in the bowl of your food processor. 

Mix and add the 250g of egg (roughly 5 eggs).

Blend with a food processor or spoon. Pour in the brown sugar and mix again.

Add the melted semi-salted butter.

Mix and pour in the chocolate chips.

A final mix, this time going well to the bottom of the bowl with a maryse.

Pour into a 23cm lined cake pan.

Bake for 50 minutes at 155°C then 20 minutes at 155°C+steam if you have that option. This will make an incredible cake. Without the steam function, add a small dish at the bottom of the oven with boiling water to create some steam. The cake bakes for a total of 1h10. 

Let it cool completely and then wrap it in cling film and chill it overnight before eating. As for the ultimate four quarters, its texture will change and be perfect!
