Les perles coco

Si vous n’avez jamais goûté les « perles coco », il est temps de les réaliser pour les manger!! Ce sont de petites boules à la farine de riz gluant, très similaires aux « maqius », mais cuites à la vapeur. Le résultat est simple et délicieux. Je trouve en plus sincèrement amusant de les préparer et elles peuvent compléter à merveille un repas de « dim sum ». Je donne ici une première version à la crème d’oeuf (mes préférées!) mais je mettrai un jour aussi celles qui sont aux cacahuètes!

Instructions
 

  • Commencez par préparer la crème d’oeuf. Mettez l’oeuf entier et le sucre dans un bol. Mélangez. 
  • Ajoutez la farine, la fécule de blé, le lait entier en poudre et la custard powder. 
  • Mélangez bien et ajoutez le beurre fondu. 
  • Versez ensuite l’eau et mélangez bien soigneusement. 
  • On obtient alors une pâte très liquide. La méthode traditionnelle chinoise consiste à cuire cette pâte à la vapeur une trentaine de minutes en mélangeant la pâte toutes les 10 minutes. Je n’avais aucun bol qui pouvait tenir dans mes paniers en bambou ou dans une casserole vapeur. J’ai donc versé la pâte dans un bol. Faites cuire dans ce cas au micro-onde 30 secondes par 30 secondes (ou même 20 avec un four puissant) en mélangeant à chaque fois. La cuisson se finira en quelques minutes. Tout dépend du four, mais entre 3 et 6 minutes pour la cuisson au micro-onde. Il faut juste vérifier la cuisson à chaque fois. 
  • Quand la pâte est presque cuite, arrêtez la cuisson et versez dans un autre bol pour arrêter la cuisson.  
  • Travaillez la pâte à la main comme une pâte à pain. On peut maintenant façonner une boule. Enfermez dans un film étirable et conservez-la au frais. 
  • Préparez ensuite la pâte, mettez la farine de riz gluant et le sucre dans un bol (cela peut se faire au robot mélangeur) et versez l’eau bouillante.
  • Versez cette préparation sur une table propre ou un marbre. Commencez à la pétrir en la pliant et en la travaillant avec la paume de main contre la table. Cela pendant au moins 5-10 min. Continuez à la travailler, toujours en la pliant, en l’écrasant de la paume de la main et la repliant. Continuez jusqu’à obtenir une pâte très douce au touché et d’aspect satiné. Roulez-la en trois boudins bien réguliers et les couper chacun en morceaux de 30g. 
  • Roulez chaque morceau entre les paumes des mains pour en faire des boules. Et rouler également la crème d’oeuf (j’en mets 20g pour 30g de pâte de riz) en petites boules. Mais on peut tout à fait en mettre plus!  
  • Enfoncez un doigt dans la boule de pâte et mettre la boule de crème d’oeuf dans la cavité. La pâte se travaille très facilement. Refermez la boule et rouler entre les mains. 
  • Faites de même avec toutes les boules coco. 
  • Plongez quelques secondes les boules dans un bol d’eau froide .  
  • Puis roulez dans la noix de coco râpée. 
  • Prenez une poignée de noix de coco et roulez les boules entre les mains avec la noix de coco pour bien incorporer celle-ci à la surface de la boule de pâte. 
  • Les perles coco sont prêtes! 
  • Placez-les dans un panier en bambou et faites cuire à la vapeur pendant 15 à 20 minutes (tout dépend de l’épaisseur des perles coco!). On peut surveiller la cuisson. Les perles coco une fois cuites, sont molles.
  • Dégustez quand c’est chaud ! On peut les conserver au frais sous un film étirable puis les réchauffer une minute au micro-onde ou bien les repasser dans le panier vapeur.

If you have never tried Coconut pearls, it’s time to make them and eat them! They are small balls made of glutinous rice  flour , very similar to “maqius”, but cooked in steam. The  result  is simple and delicious. I also find it  sincerely  fun to prepare them and they are a perfect complement to a “dim sum” meal. I give here a first version with egg cream (my favorite!) but one day I will also put the ones with peanuts! 

 

 

Recipe for 15 to 20 “Coconut pearls”:

 
 
For the egg cream:
  • 1 egg
  • 110g of sugar
  • 100g water
  • 25g custard powder
  • 25g of wheat starch
  • 30g of flour
  • 30g melted butter
  • 30g of whole milk powder
Dough:
  • 200g glutinous rice flour
  • 55g of sugar
  • 130ml boiling water
  • dried grated coconut

Instructions:

 

The unusual ingredients for the egg custard are custard powder and wheat starch, both of which can be found on the internet or in Asian grocery stores. The wheat starch is sold in packages that call it “wheat starch” and translate it as “wheat flour”, but it is wheat starch. 
 
 
Start by making the egg cream. Put the whole egg and sugar in a bowl. Mix. 
 
 
Add the flour, wheat starch, whole milk powder and custard powder. 
 
 
Mix well and add the melted butter. 
 
 
Pour in the water and mix thoroughly. 
 
 
The result is a very liquid paste. The traditional Chinese method is to steam this dough for about  30  minutes, mixing the dough every 10 minutes. I didn’t have any bowl that could fit in my bamboo baskets or in a steamer. So I poured the dough into a bowl. In this case, cook in the microwave for 30 seconds at a time (or even 20 seconds with a powerful oven), stirring each time. The cooking will be finished in a few minutes. It depends on the oven, but between 3 and 6 minutes for microwave cooking. You just have to check the cooking each time. 
 
 
When the dough is almost done, stop cooking and pour into another bowl to stop the cooking. 
 
 
Work the dough by hand like a bread dough. We can now shape a ball. Wrap it in cling film and keep it in a cool place. 
 
 
Then prepare the dough, put the glutinous rice flour and sugar in a bowl (this can be done in a blender) and pour in the boiling water.
 
 
 
Pour this preparation on a clean table or marble. Start kneading it by folding it and working it with the palm of your hand against the table. This will take at least 5-10 minutes. Continue to work it, still folding it, crushing it with the palm of your hand and folding it again. Continue until you have a very soft, satiny looking dough. Roll it out into  three  regular rolls and  cut each one  into 30g pieces. 
 
 
 
Roll each piece between the palms of your hands to make balls. And also roll the egg cream (I use 20g of it for 30g of rice dough) in small balls. But you can use more! 
 
 
Stick a finger in the dough ball and put the egg cream ball in the cavity. The dough is very easy to work with. Close the ball and roll it between your hands. 
 
 
Do the same with all the coconut balls. 
 
 
Dip the balls in a bowl of cold water for a few seconds. 
 
 
Then roll in the grated coconut. 
 
 
Take a handful of coconut and roll the balls between your hands with the coconut to incorporate it well on the surface of the dough ball.
 
 
The Coconut pearls are ready! 
 
 
Place them in a bamboo basket and steam for 15 to 20 minutes (depending on the thickness of the Coconut pearls!). You can monitor the cooking process. Coconut pearls are soft when cooked.
 
 
Taste when it is hot! They can be kept in a cool place under a cling film and then reheated for a minute in the microwave or put them back in the steamer basket.
