Curry moelleux jaune au crabe

Voici un curry de crabe bien différent des curries bien crémeux que je vous poste d’habitude ou de ceux que je fais lors de mes ateliers de cuisine thaïe. Pourtant c’est bien un curry qui existe en Thaïlande et que j’ai dégusté plusieurs fois à Bangkok. Il est très différent car d’une part il n’est pas fait à base de pâte de curry, mais de poudre de curry, et jaune de Madras de surcroît. Puis il y a de l’œuf dans le lait de coco, ce qui donne une texture s’approchant d’un flanc très moelleux. Il cuit directement dans la poêle, dans laquelle il caramélise légèrement en dessous et se sert tel quel. Il suffit ensuite de poser le curry et de servir directement à la cuillère. Un délice et surtout ultra-simple à faire !

  • Mélangez tout d’abord le lait de coco, le curry jaune, le sucre et le nuoc mam.
  • Je le fais au wok mais vous pouvez faire cette opération à la casserole. Pesez le wok contenant le lait de coco. Vous allez voir pourquoi. Laissez bouillir puis pesez à nouveau de temps en temps. Il faut que vous perdiez depuis le début de l’opération 150g en tout. L’eau du lait de coco va donc s’évaporer. En pesant la totalité du wok au début et pendant la cuisson, vous saurez quand exactement vous aurez perdu les 150g.
  • Quand 150g d’eau se sont évaporés, versez la sauce obtenue dans un récipient et laissez tiédir. Raclez bien la sauce dans le wok ou la casserole. Au bout de 10 minutes, ajoutez les 50g d’œuf et mélangez soigneusement.
  • Pour le crabe, je prends la chair de crabe nautilus chez metro. Si vous n’avez pas accès à ce magasin par vous-même ou des amis, vous pouvez prendre de la chair de crabe classique, mais la meilleure possible.
  • Versez 150g dans une petite poêle de 20cm. J’ai pris ici une poêle en fonte.
  • Laissez cuire 2-3 minutes puis versez la sauce.
  • Recouvrez bien la chair de crabe puis posez un couvercle et laissez cuire sur feu doux.
  • Le curry est prêt quand le centre tremblote encore. Le dessous du curry va délicieusement se colorer et donner des saveurs délicieuses. Il caramélise presque en dessous et sur les côtés. À servir avec un riz blanc.

Here is a crab curry that is quite different from the creamy curries I usually post or those I make during my Thai cooking workshops. However it is a curry that exists in Thailand and that I tasted several times in Bangkok. It is very different because on the one hand it is not made with curry paste, but with curry powder, and yellow Madras to boot. Then there is egg in the coconut milk, which gives a texture approaching a very soft flank. It cooks directly in the pan, in which it caramelizes slightly underneath and is served as is. Then simply place the curry on top and serve directly with a spoon. A delight and above all ultra-easy to make!

Pour CURRY MOELLEUX JAUNE AU CRABE 2 personnes :

  • 400g of coconut milk
  • 2 teaspoons of yellow madras curry
  • 1 teaspoon of nuoc mam
  • 1 teaspoon of brown sugar
  • 50g of egg
  • 150g of crab meat
  • 1 spring onion (or chives) to serve

Instructions : 

First, mix the coconut milk, yellow curry, sugar and nuoc mam.

I do it in a wok but you can do it in a pan. Weigh the wok containing the coconut milk. You will see why. Let it boil and then weigh it again from time to time. You must lose 150g in total since the beginning of the operation. The water in the coconut milk will evaporate. By weighing the entire wok at the beginning and during cooking, you will know exactly when you have lost the 150g.

When 150g of water have evaporated, pour the sauce obtained into a container and let it cool. Scrape the sauce well into the wok or pan. After 10 minutes, add the 50g of egg and mix thoroughly.

For the crab, I take the nautilus crab meat at metro. If you don’t have access to this store through yourself or friends, you can get classic crab meat, but the best you can get.

Pour 150g into a small 20cm pan. I took here a cast iron pan.

Cook for 2-3 minutes and then pour the sauce over.

Cover the crabmeat well, then put a lid on it and let it cook over low heat.

The curry is ready when the center is still shaking. The underside of the curry will color deliciously and give delicious flavors. It almost caramelizes on the bottom and sides. Serve with white rice.
