Frites au paprika

Bonjour à toutes et tous ! Je reviens enfin avec un site posé cette fois sur un nouveau serveur. Je croise les doigts que cette fois il fonctionne pour le mieux. Cela va prendre encore quelques jours pour qu’il soit totalement opérationnel. Je continue ce beau partenariat avec lespommesdeterre.com et cette fois je vous propose des frites bien croustillantes aux épices avec de délicieuses sauces maison.   • Lavez les pommes de terre à l’eau fraîche puis séchez-les.
  • Épluchez ou non les pommes de terre, c’est une question de goût !
  • Coupez les frites comme à votre habitude, soit avec un découpoir à frites, soit au couteau. Faites d’abord des tranches d’un peu moins d’un centimètre, puis des bâtonnets de même taille. 
  • Placez les frites crues dans un torchon propre puis essuyez-les bien. Faites chauffer l’huile ou la matière grasse avec laquelle vous voulez cuisiner (graisse de bœuf, graisse de canard etc.) tout d’abord à 160°C.
  • Ne remplissez pas trop la friteuse utilisée. 
  • Faites cuire pour un premier bain.
  • Pendant ce premier bain (sur les deux de la cuisson), mélangez les épices : 2 cuillerées à café de paprika en poudre, 1 cuillerée à café de piment doux fumé si vous avez, une demi-cuillerée à café d’ail en poudre, un soupçon de piment fort, du sel et du poivre. Mélangez bien. 
  • Profitez de la cuisson pour préparer également les sauces :
    1- Sauce express : mettez un œuf, une cuillerée à soupe de vinaigre de vin, 1 cuillerée à café de moutarde, 1 gousse d’ail, et 200ml d’huile dans un récipient haut et étroit. Mettez un mixeur plongeant puis mixez. En quelques secondes la sauce est prête. Versez-la dans un récipient, puis ajoutez du paprika, du sel et du poivre à votre goût. Vous pouvez aussi mettre un peu de crème (3-4 cuillerées à soupe) pour avoir une sauce plus onctueuse. 
    2- On peut aussi faire une mayonnaise d’une autre façon : mettez un jaune d’œuf, une cuillerée à café de moutarde, du sel, du poivre et un peu d’huile dans un récipient et mélangez à grande vitesse avec un fouet électrique.
  • Versez l’huile progressivement tout en fouettant pour émulsionner le tout en une mayonnaise ferme. Versez environ 200ml d’huile. À la fin, vous pourrez ajouter du wasabi ou des épices de votre choix.
  • Vous pourrez aussi ajouter un peu de crème en fin de processus pour lui donner l’onctuosité de votre choix. 
  • 3-Pour une sauce un peu plus légère (voir la vidéo ) : prenez deux trois cuillerées à soupe de la première sauce et ajoutez l’équivalent de crème fraîche épaisse. Prenez un petit bouquet de ciboulette puis ciselez-la finement. Versez dans la sauce, salez et poivrez à votre goût. Mélangez bien et goûtez ! 
    Quand les frites prennent l’apparence de pommes de terre cuites, sortez-les de l’huile pour faire frire de la même façon le reste des frites coupées. 
  • Quand toutes les frites ont eu un premier bain, faites chauffer l’huile cette fois à 180°C. Mettez toutes les frites dans la friteuse pour un deuxième bain global jusqu’à ce qu’elles soient cette fois dorées et bien croustillantes.
  • Versez dans un récipient dans lequel vous aurez mis du papier absorbant. Laissez-les s’égoutter une minute avant d’enlever le papier puis de versez le mélange d’épices.
  • Secouez le récipient pour bien les disperser.
  • Servez-les immédiatement avec les sauces à disposition !

In addition to the written recipe, you also have the recipe on video!

Recettes des FRITES AU PAPRIKA :

  • 1 kilo of potatoes for fries (ask your local greengrocer or look at the package)
  • frying oil (or other fat such as beef fat)

Spices :

  • paprika
  • garlic powder
  • hot pepper powder
  • salt pepper

For the sauces :

  • Rapeseed oil
  • 2 eggs
  • Dijon mustard
  • Wine vinegar
  • Heavy cream

Your choice:

  • wasabi, sweet paprika, espelette pepper, chives, salt, pepper, turmeric etc.

Instructions : 

Wash the potatoes in fresh water and dry them.

Peel or not peel the potatoes, it’s a matter of taste!

Cut the fries as usual, either with a French fry cutter or a knife. First make slices just under a centimetre long, then make sticks of the same size.

Place the raw fries in a clean cloth and wipe them dry. Heat the oil or fat you want to cook with (beef fat, duck fat, etc.) first to 160°C.

Do not overfill the fryer you are using.

Cook for a first bath.

During this first bath (out of the two of the cooking), mix the spices: 2 teaspoons of paprika powder, 1 teaspoon of smoked sweet pepper if you have it, half a teaspoon of garlic powder, a dash of hot pepper, salt and pepper. Mix well.

Take advantage of the cooking time to prepare the sauces as well:

1- Express sauce: put an egg, a tablespoon of wine vinegar, 1 teaspoon of mustard, 1 clove of garlic, and 200ml of oil in a tall, narrow container. Put in a hand blender and blend. In a few seconds the sauce is ready. Pour it into a container and add paprika, salt and pepper to taste. You can also add a little cream (3-4 tablespoons) for a smoother sauce.

2- You can also make mayonnaise in another way: put an egg yolk, a teaspoon of mustard, salt, pepper and a little oil in a container and mix at high speed with an electric whisk.

 

Pour in the oil gradually while whisking to emulsify the mixture into a firm mayonnaise. Pour in about 200ml of oil. At the end, you can add wasabi or spices of your choice.

You can also add a little cream at the end of the process to give it the smoothness of your choice.

3-For a slightly lighter sauce (see video): take two to three tablespoons of the first sauce and add the equivalent of heavy cream. Take a small bunch of chives and chop them finely. Pour into the sauce and add salt and pepper to taste. Mix well and taste!

When the fries look like baked potatoes, remove them from the oil and fry the rest of the cut fries in the same way.

When all the fries have had their first bath, heat the oil this time to 180°C. Put all the fries in the deep fryer for a second overall bath until they are golden brown and crispy.

Pour into a container with paper towels. Let them drain for a minute before removing the paper and pouring in the spice mixture.

Shake the container to disperse them well.

Serve them immediately with the available sauces!
