Giant Oatmeal Chocolate Bars

This recipe has been on my mind for a while. It took me a while to develop it. I had to go back and forth a few times to find the dosage that works without baking. I used to eat similar cereal bars in London over 15 years ago, they were called “giant peanut bars”. I was completely crazy about it! It looks very much like a kind of flapjack. I had posted my flapjack recipe at the very beginning of my blog, you can find the recipe HERE. This recipe is quite different in taste and texture and most importantly, there is no baking involved! All you need is a pan to make this very healthy snack for yourself or your children. I love oatmeal, so here’s a new way to make it. 

Recipe for “Giant peanut bars”:

-100g of “special cooking” margarine
-75g of rapeseed oil
-100g of brown sugar
-30g of sugar
-50g of agave syrup
-15g of water
-1 teaspoon of liquid vanilla
-2 pinches of salt
-360g of Quaker oats (because they cook fast!)
-65g of peanut puree
-40g of sunflower seeds
-chocolate chips

Place sugars, agave syrup, oil, water, vanilla, salt and margarine in a saucepan. 



Heat over low heat to melt sugars and margarine. 




Add the oatmeal. 



While mixing, let heat on low heat until flakes have a cooked appearance (they are no longer distinguish really). This may take 7-8 minutes. In fact, it cooks like a porridge, that’s why it doesn’t need to be baked.





Add the peanut puree off the heat.



Mix well and heat for two or three minutes over low heat.




Add the sunflower seeds. 




Pour into a 20X20cm square pan lined with parchment paper. 




Pack well and smooth with the back of a tablespoon. Sprinkle with sunflower seeds. 




Add the chocolate chips on top. 




With the heat of the dough, the nuggets will melt just right and stick. 







Allow to cool and then store in a cool place to harden completely, which will allow the dough to be cut more easily. 




Cut in the chosen format. Here, I cut in half, then each half in four. 




Distribute to enraged children or hungry stomachs. These cereal bars can be stored for a long time in stretch film. There is nothing that expires quickly: neither egg nor cream nor butter…
