Tarte aux poireaux, chorizo et chèvre

Cela faisait un moment que je n’avais pas fait de tarte salée. J’aime aussi faire les tartes épaisses, donnant des parts hautes dans lesquelles on ne souhaite que mordre. En voici une nouvelle, au goût simple et généreux, avec des poireaux, du chorizo et du fromage de chèvre qui viendra atténuer le piquant. Libre à vous de choisir le chorizo que vous aimez, doux, piquant ou extra-fort ! À dévorer de toutes les façons : froide, tiède ou bien chaude.

Pour une tarte de 20cm de diamètre sur 4,5 de hauteur

    Pour la pâte :

    • Pour la pâte, je fais presque celle de mes empadas au poulet crémeux. La recette est ICI et vous pourrez congeler le surplus. J’ajoute ici 15g de sucre en plus, qui va colorer la pâte. Vous pouvez vous en passer !
      Mélangez la farine et le beurre demi-sel jusqu’à obtenir une poudre fine.
    • Ajoutez l’œuf et mélangez jusqu’à avoir une pâte homogène. C’est tout !
    • Ne mettez pas la pâte au frais, mais simplement dans du film étirable. Elle s’étale parfaitement à température ambiante.
    • Enlevez la racine des poireaux et une partie du vert. Lavez-les bien.
    • Enlevez la peau du chorizo et coupez-le en petits morceaux.
    • Mettez-le dans une poêle assez large et laissez-le cuire pour qu’il rende bien son gras et se colore légèrement. Coupez les poireaux en 4 dans la longueur puis en petits morceaux.
    • Versez les poireaux et laissez cuire 15 minutes environ en mélangeant de temps en temps, sur feu modéré.
    • Là les poireaux ne sont pas encore cuits. Vous verrez deux photos plus bas leur aspect.
    • Pendant ce temps mélangez la crème, les œufs, salez et poivrez à votre goût.
    • Versez les poireaux cuits et mélangez tout de suite.
    • Coupez le fromage de chèvre en morceaux et versez-le dans la migaine.
    • Et voilà !
    • Pour la pâte, étalez-la légèrement farinée sur une feuille de papier sulfurisé. Placez la pâte dans le cercle à entremet puis coupez l’excédent. J’utilise ici un cercle de 20cm sur 4,5 de hauteur.
    • Laissez le tout sur une plaque à pâtisserie garnie de papier sulfurisé. Versez la migaine aux poireaux.
    • Faites cuire 1h15 à 170°C. Vérifiez et adaptez la cuisson à votre four !
    • Laissez tiédir avant de déguster avec une bonne salade. Elle sera aussi délicieuse froide !

    It had been a while since I had made a savory pie. I also like to make thick pies, giving high slices that you just want to bite into. Here is a new one, with a simple and generous taste, with leeks, chorizo and goat’s cheese that will reduce the spiciness. It’s up to you to choose the chorizo you like, mild, spicy or extra-strong! To be devoured in all ways: cold, lukewarm or hot.

    For a tart 20cm in diameter by 4.5 in height

    For the dough:

    • 400g flour
    • 15g of sugar
    • 280g semi-salted butter
    • 1 egg

    For the goat cheese chorizo leek migaine

    • 5 medium sized leeks
    • 125g chorizo, spicy of your choice
    • 375g full cream
    • 3 eggs
    • 150g goat cheese
    • salt pepper

    For the dough, I almost make the one for my creamy chicken empadas. The recipe is HERE and you can freeze the leftovers. I add here 15g more sugar, which will color the dough. You can do without it!

    Mix the flour and semi-salted butter until you obtain a fine powder.

    Add the egg and mix until you have a smooth paste. That’s all !

    Do not put the dough in the fridge, but simply in stretch film. It spreads well at room temperature.

    Remove the root of the leeks and part of the green. Wash them well.

    Remove the skin from the chorizo and cut it into small pieces.

    Put it in a large enough frying pan and let it cook so that it renders its fat well and takes on a slight color. Cut the leeks in 4 lengthways and then into small pieces.

     

    Add the leeks and cook for about 15 minutes, stirring occasionally, over moderate heat.

    There the leeks are not yet cooked. You will see two photos below of their appearance.

    Meanwhile mix the cream, eggs, salt and pepper to taste.

    Add the cooked leeks and mix immediately.

    Cut the goat cheese into pieces and pour it into the migaine.

     

    And There you go !

    For the dough, spread it lightly floured on a sheet of parchment paper. Place the dough in the dessert ring then cut off the excess. I use here a circle of 20cm by 4.5 in height.

    Leave everything on a baking sheet lined with parchment paper. Pour the leek migaine.

    Bake for 1h15 at 170°C. Check and adapt the cooking to your oven!

    Let cool before serving with a good salad. It will also be delicious cold!
