Pâtes "A La Carbonara"

Everyone knows pasta carbonara. Charcoal sauce is often made with cream, but no, there is no cream! I offer you the original recipe, with pancetta, pecorino, eggless durum wheat pasta, eggs and black pepper. Nothing more! A quick, simple and delicious recipe.

Pasta carbonara recipe for 4 people:

-400g of dry durum wheat pasta
-1 egg + 4 yolks
-200g of pancetta
-80g of pecorino cheese
-black pepper

Instructions:

Here is the pancetta and the real pecorino… If these ingredients are not readily available, they can be replaced by lardons and parmesan cheese, as is often done in recipes.

I asked my Italian caterer to cut the pancetta into 100g slices. This way, they keep some thickness. Cut the pancetta into pieces (the size of bacon).

Brown the pancetta pieces in a hot pan.

It will start to brown slightly.

When the pancetta is cooked, remove the excess fat. I simply run a paper towel across the bottom of the pan to catch the grease.

Finely grate the pecorino.

Place egg and yolks in a bowl and whisk with a fork.

Add two or three tablespoons of grated pecorino cheese.

And mix well.

Cook the pasta in a large quantity of boiling salted water. Just cook them “al dente”, according to the instructions of the package used.

Drain the pasta, keeping 10cl of the pasta cooking water.

Return them to the pan off the heat and add the pancetta.

Beaten eggs. Add one or two tablespoons of pasta cooking water if necessary.

Mix well and serve immediately.

Sprinkle with grated pecorino and freshly ground black pepper.
