Poke bowl thon saumon sauce mangue-passion

Voici la troisième et dernière recette en partenariat avec la bière bio Uhaina. Cette fois je vous propose un poke bowl sain, au riz rond complet avec du saumon et du thon marinés et plein de bonnes choses, pour aller avec un bière bio Uhaina IPA glacée (médaille d’argent Paris 2020) ! C’est l’été dans l’assiette ! Je cuisine souvent des poke bowls, car les rares fois où j’en achète, je suis toujours un peu déçu, alors autant le faire soi-même. En plus de cela, je vous mets ici une sauce mangue passion qui viendra délicieusement exciter les papilles !

  • La veille ou le matin, coupez les pavés de poisson en morceaux.
  • Versez le jus de citron vert, le ponzu et l’huile de sésame grillé.
  • Pour information, voici le ponzu. On peut le remplacer par de la sauce soja classique aux 3/4 avec 1/4 de jus de citron jaune.
  • Parsemez de graines de sésame. Laissez reposer ensuite la nuit ou la matinée au frais sous un film étirable.
  • Le lendemain, faites cuire le riz rond complet. Lavez-le à l’eau froide pendant 1 minute. Placez-le dans un rice cooker avec 300g d’eau, fermez le couvercle et mettez en route.
  • Quand le riz est cuit, versez l’huile de sésame et salez à votre goût.
  • Profitez de la cuisson du riz pour couper les légumes et fruits en morceaux. Il y a aussi les avocats, le chou rouge. N’oubliez pas la cuisson des edamame que l’on pourra remplacer par des petits pois.
  • Pour la sauce, récupérer la chair d’un beau fruit de la passion.
  • Ajoutez l’huile d’olive et la sauce soja.
  • Mélangez bien puis versez dans un petit tamis placé au dessus d’un bol.
  • Ajoutez 2-3 morceaux de mangue. J’avais pris de la mangue congelée qui s’écrase bien. Écrasez-la bien à la fourchette puis mélangez le tout dans le tamis. Mélangez pour que tout le liquide tombe en dessous. Il ne restera dans le tamis, que les graines du fruit de la passion. Il faut donc bien écraser la mangue !
  • Vous allez récupérer une sauce bien liquide et savoureuse.
  • Prenez deux bols (pour des gros mangeurs comme moi). On peut je pense servir même 3 ou 4 personnes avec tout cela !
    Versez le riz dans le fond, disposez le poisson, puis le reste des ingrédients. Mettez la sauce à disposition puis servez sans attendre !

Here is the third and final recipe in partnership with Uhaina Organic Beer. This time I propose you a healthy poke bowl, with whole grain rice, marinated salmon and tuna and lots of good things, to go with an organic beer Uhaina IPA ice cold (silver medal Paris 2020)! It’s summer on the plate! I often cook poke bowls, because the few times I buy them, I’m always a little disappointed, so I might as well make it myself. In addition to that, I put here a mango passion sauce that will deliciously excite the taste buds! Find all Uhaina beers HERE!

Recette du POKE BOWL THON SAUMON SAUCE MANGUE-PASSION : 

For 2-3 people:

For rice:

  • 200g of brown rice
  • 300g of water
  • 2 tablespoons of toasted sesame oil
  • salt

For fish:

  • 1 tuna steak
  • 1 salmon steak without skin or bones
  • 1 tablespoon of lime juice
  • 1 tablespoon of ponzu
  • 1 tablespoon of toasted sesame oil
  • a few sesame seeds

For the rest :

  • 1 lawyer
  • 1 mango
  • some radishes
  • 1 carrot
  • 1 quarter red cabbage, finely chopped
  • 150g of edamame steamed for 12 minutes
  • 1 mini cucumber
  • some raspberries
  • a handful of raw cashews

For the sauce

  • 1 passion fruit
  • 3 small pieces of mango
  • 1 tablespoon of olive oil
  • 1 tablespoon of clear soy sauce
  • 1cm freshly grated ginger

Instructions : 

The day before or in the morning, cut the fish into pieces.

 

Pour in lime juice, ponzu and toasted sesame oil.

 

For information, here is the ponzu. It can be replaced by classic soy sauce with 3/4 of yellow lemon juice.

Sprinkle with sesame seeds. Then let it sit overnight or in the morning in a cool place under a cling film.

The next day, cook the brown rice. Wash it in cold water for 1 minute. Place it in a rice cooker with 300g of water, close the lid and start.

 

When the rice is cooked, pour in the sesame oil and salt to taste.

While the rice is cooking, take the opportunity to cut the vegetables and fruits into pieces. There are also avocados, red cabbage. Don’t forget to cook the edamame, which can be replaced by peas.

For the sauce, use the flesh of a beautiful passion fruit.

Add olive oil and soy sauce.

Mix well then pour into a small sieve placed over a bowl.

Add 2-3 pieces of mango. I had taken frozen mango which crushes well. Crush it well with a fork and then mix it in the sieve. Stir so that all the liquid falls to the bottom. Only the seeds of the passion fruit will remain in the sieve. It is therefore necessary to crush the mango!

You will get a very liquid and tasty sauce.

Take two bowls (for big eaters like me). I think we can serve even 3 or 4 people with all this!

Pour the rice in the bottom, arrange the fish, then the rest of the ingredients. Make the sauce available and serve without delay!
