Risotto aux Truffes noires

Un plat de luxe pour un diner d’exception. J’ai eu le privilège de recevoir deux belles truffes noires du Périgord, pars mes amis Maryse et Olivier, propriétaires du Café Louise à Périgueux. Maryse est une excellente cuisinière et je vous conseille vivement d’aller goûter ses plats ! Elle m’a expliqué comment faire ce fameux risotto à la truffe noire. J’en suis complètement fou. Je vous propose donc la recette de ce plat explosif en saveurs ! Il faut simplement préparer à l’avance le beurre de truffes (que je congèle pour en avoir toute l’année) et le bouillon qui servira à faire le risotto au moins la veille.

  • Commencez par préparer le bouillon. Vous pouvez le faire la veille car il va mijoter pendant 5 heures. Versez l’huile d’olive dans une grande cocotte sur feu fort, avec le jarret et les os. Faites colorer la viande des deux côtés. 
  • Ajoutez les légumes épluchés et coupés en morceaux. Pour les gousses d’ail, coupez-les simplement en deux avec la peau.
  • Versez de l’eau jusqu’à 7-8 cm au dessus des os.
  • Ajoutez le bouquet garni, salez et poivrez. Portez maintenant à ébullition et baissez le feu au minimum. Laissez un couvercle en place et laissez cuire 5 heures sur feu très doux.
  • Le bouillon va sentir très bon dans votre cuisine ! 
  • Récupérez le bouillon sans les légumes, puis filtrez-le dans un simple tamis. Vous pourrez manger les légumes et la viande pour un autre repas. 
  • Mesurez-en 1,5 litre. 
  • Pour le risotto, versez le beurre et l’huile d’olive dans une casserole. Ajoutez l’échalote finement hachée et laissez cuire sur feu doux pendant 5 minutes. Ajoutez alors le riz à risotto. 
  • Mélangez bien puis versez le vin blanc.
  • Laissez-le complètement s’absorber.
  • Ajoutez alors le bouillon. Je le mets en 4 fois. Je ne fais plus par louchées. Je préfère mettre une bonne quantité et laissez mijoter sur feu doux jusqu’à ce que le jus soit absorbé. Puis ajoutez un autre quart de bouillon et ainsi de suite. Comme on mesure les quantités au départ, aucun risque de rater ! 
  • Quand vous en êtes au dernier quart de bouillon, râpez le parmesan.
  • Quand tout le bouillon est absorbé, versez alors le parmesan.
  • Ajoutez les 90g de beurre de truffe.
  • Et la cuillerée à soupe de pâte de truffe.
  • Mélangez une dernière fois. Goûtez pour rectifier le sel et le poivre (normalement le bouillon est déjà assaisonné). Servez dans 6 assiettes et râpez finement un peu de truffe noire si vous en avez sous la main. On peut aussi servir ce plat avec 2-3 tranches de foie gras poêlé par personne !

Maryse is an excellent cook and I highly recommend you to go and taste her dishes! She explained to me how to make this famous black truffle risotto. I’m completely crazy about it. I propose you the recipe of this explosive dish in flavours! All you have to do is prepare the truffle butter (which I freeze to have it all year round) and the stock that will be used to make the risotto at least the day before. 
 

Recipe for RISOTTO WITH BLACK TRUFFLES : 

For 6 persons :

Broth: 

  • 4 tablespoons of olive oil
  • 1 veal shank
  • 2 pieces of marrow bone
  • 2 turnips
  • 2 carrots
  • 2 onions
  • 2 stalks of celery
  • 2 cloves of garlic
  • 1 small bouquet garni
  • salt pepper



For the risotto

  • 40g of semi-salted butter
  • 2 tablespoons of olive oil
  • 2 shallots
  • 450g of risotto rice
  • 20cl of white wine
  • 1,5l of filtered broth
  • 90g of truffle butter (see recipe HERE)
  • 1 tablespoon truffle paste (if available)
  • 50g of freshly grated parmesan cheese
  • a little freshly sliced truffle

Instructions: 

Start by preparing the broth. You can make it the day before because it will simmer for 5 hours. Pour the olive oil into a large casserole dish over high heat with the shank and bones. Brown the meat on both sides. 

 

Add the peeled and chopped vegetables. For the garlic cloves, simply cut them in half with the skin.

Pour water up to 7-8 cm above the bones.

Add the bouquet garni, salt and pepper. Now bring to a boil and reduce heat to minimum. Leave a lid on and cook for 5 hours on very low heat.

 
The broth will smell great in your kitchen! 

 

 

Recover the broth without the vegetables, pThen filter it through a simple sieve. You can eat the vegetables and meat for another meal. 

 
Measure out 1.5 liters. 
 

 

For the risotto, pour the butter and olive oil into a saucepan. Add the finely chopped shallot and cook over low heat for 5 minutes. Then add the risotto rice. 

 

Mix well and pour in the white wine.

Let it absorb completely.

 

Then add the broth. I put it in 4 times. I don’t do dips anymore. I prefer to put a good amount and simmer on low heat until the juice is absorbed. Then add another quarter of broth and so on. Since we measure the quantities at the beginning, there is no risk of missing! 

 

When you are at the last quarter of the broth, grate the parmesan.

 
 

When all the broth is absorbed, pour in the parmesan cheese.

Add the 90g of truffle butter.

And the tablespoon of truffle paste.

 

Mix one last time. Taste for salt and pepper (usually the broth is already seasoned). Serve on 6 plates and finely grate some black truffle if you have some on hand. You can also serve this dish with 2-3 slices of fried foie gras per person!
