Tarte à l'ail des ours

Dernière recette avec l’ail des ours pour cette année. En ce moment je publie un peu moins, car je viens de terminer mon 7ème livre qui sortira en octobre 2021, et je vais aussi souvent en Bretagne en famille. Je vous propose cette fois une savoureuse tarte à l’ail des ours, simple à faire et très originale. Dès que je peux publier un peu plus, c’est promis, je le fais ! Mais sachez que j’ai pas mal de recettes inédites et incroyables dans le prochaine ouvrage.

  • Préparez tout d’abord votre pâte comme indiqué dans la recette ICI. J’ai pris ma pâte des empadas qui est parfaite. Étalez la moitié de la pâte réalisée (emballez et congelez le reste). Je prends ici un moule rectangulaire, mais la recette est valable pour un moule circulaire de 20cm de diamètre. J’ai simplement voulu changer le format pour la photo.
  • Placez la pâte étalée dans le moule choisi puis coupez l’excédent.
  • Versez dans un récipient, les œufs, la crème entière (liquide ou non), le pesto et le comté.
  • Mélangez bien, salez et poivrez. Je mets aussi un peu de piment en poudre.
  • Hachez l’ail des ours préalablement lavé et essoré, fleurs comprises, et versez le tout dans la crème.
  • Versez dans le fond de pâte.
  • Faites cuire 1h15 à 170°C.
  • Laissez tiédir puis dégustez cette délicieuse tarte !

Last recipe with wild garlic for this year. At the moment I am publishing a little less, as I have just finished my 7th book which will be released in October 2021, and I also often go to Brittany with my family. This time I propose a tasty bear garlic pie, simple to make and very original. As soon as I can post a little more, I promise, I will! But you should know that I have a lot of new and amazing recipes in the next book.

Tarte à l’ail des ours, pour une tarte de 20cm de diamètre :

Pastry (enough for at least two pies):

  • 400g flour
  • 280g semi-salted butter
  • 1 egg

Migaine:

  • 2 eggs
  • 250ml full cream
  • 70g of wild garlic pesto (recipe HERE)
  • 60g of grated comté cheese
  • 100g of chopped wild garlic
  • salt pepper

Instructions :

First, prepare your dough as described in the recipe HERE. I took my empadas dough which is perfect. Roll out half of the dough (wrap and freeze the rest). I’m using a rectangular pan here, but the recipe is valid for a circular pan of 20cm diameter. I just wanted to change the format for the photo.

Place the rolled out dough in the chosen pan and cut off the excess.

Pour the eggs, whole cream (liquid or not), pesto and comté into a bowl.

Mix well, add salt and pepper. I also put a little chili powder.

Chop the washed and dried wild garlic, including the flowers, and pour it into the cream.

Pour into the dough base.

Bake for 1h15 at 170°C.

Let cool and then enjoy this delicious pie!

La meilleure recette à l’ail des ours que j’ai pu tester, autant la pâte que la garniture, c’est vraiment une réussite.
