Voici la recette du « Touron d’Alicante » ou « Turron de Alicante ». C’est un nougat cassant et croquant espagnol. Je préparais dans le secret cette recette depuis plusieurs mois! J’ai cherché une vraie recette de touron d’Alicante partout, sur internet, dans les livres de cuisine espagnole, dans les livres de confiseurs professionnels, mais sans succès. Les recettes s’approchaient à peine du vrai résultat! J’ai dû avancer à l’aveugle et arranger à maintes reprises la recette pour arriver au résultat qui enfin atteint mes espérances! J’ai raté un certains nombres de fois, expérimenté plusieurs techniques, jeté des kilos de miel, sucre et amandes, me suis énervé, et surtout je me suis juré d’y arriver! C’est donc avec une grande fierté que je vous la présente enfin. Je tiens à préciser que cette recette s’adressera sans doute à ceux qui aiment les défis culinaires et qu’il faut un tout petit peu de patience pour y parvenir.

  • J’ai préparé mon touron dans un cadre de 16X16cm. Pré-découper les feuilles de pain azyme à la dimension interne du cadre! Avec une règle et un cutter c’est très simple!
  • Mettre le miel à cuire sur feu doux dans une petite casserole. Il faut en fait éliminer le plus possible l’eau du contenue dans le miel. Il faut porter celui-ci à 121°C mais en prenant son temps!!
  • Pendant ce temps, dans une autre casserole, mettre le sucre 2 (85g), le sirop de glucose et les 40g d’eau sur feu doux. Il faudra porter ce mélange à 150°C, au grand cassé.
  • Quand le miel s’approche de la température du petit boulé (121°C), commencer à monter le blanc d’œuf (15g!) avec le sucre 1 et la pincée de crème de tartre.
  • Ajouter le miel quand il atteint la température voulue. Le verser en filet sur le blanc tout en continuant de fouetter.
  • Ne jamais cesser de mélanger au fouet électrique ce mélange.
  • Quand le sucre atteint 150°C (ce qui n’est pas le cas sur la photo!), le verser également en filet sur le blanc mielé toujours en fouettant!
  • On obtient une sorte de meringue italienne qu’il ne faut jamais arrêter de fouetter.
  • Mettre ce mélange dans un bain-marie bouillant. J’ai acheté cette casserole « magique » qui a un bain-marie intégré!
  • Et là c’est l’étape la plus longue… Il va falloir mélanger cette pâte sans cesse dans son bain-marie! L’explication est simple: si on arrêtait la cuisson à ce moment là, on obtiendrait une sorte de nougat archi-coulant qui durcirait à peine au réfrigérateur. Il faut donc poursuivre la cuisson du nougat dans ce bain-marie pour évaporer toute l’eau contenue dans les blancs, le miel, le sirop de sucre pour assécher le nougat. Plus on attend, plus le nougat devient dur et cassant. C’est exactement de cette manière que l’on obtient un nougat de Montélimar. Sauf que pour le touron dur d’Alicante, il faut aller bien au-delà ce cette étape pour assécher presque complétement la pâte de nougat. Bien évidemment, les professionnels ont des machines plus performantes que notre bain-marie…. Mais on peut très bien y arriver sans! Pour obtenir la fermeté désirée, il faut prélever un tout petit peu de pâte que l’on plonge dans de l’eau froide pour constater son degré de cuisson. Pour celui-ci , j’ai passé presque 45 minutes à tourner la pâte à la cuiller dans son bain-marie bouillant… C’est donc le temps que probablement vous passerez à assécher le nougat! Mais attention, si on double la recette, cela prendra plus de temps!!
  • Quand j’écris au début de la recette avoir essayé plusieurs méthodes, je montre ici une de mes expériences ratées! Dans certaine recette, ils disent qu’il faut assécher le nougat dans une cuve avec un chalumeau. J’ai donc bien entendu essayé… L’effet est joli sur la photo, mais tout a absolument brûlé dans la cuve!! Même en contrôlant le degré de la flamme!! Je déconseille donc vivement cette méthode!! Le bain-marie a été la seule solution efficace…
  • Pendant l’asséchement de la pâte de nougat, mettre les amandes sur une plaque allant au four à 180°C.
  • Surveiller (tout en continuant de mélanger le nougat!!) les amandes, les laisser cuire et dorer 10-12 minutes. Il faut qu’elles soient légèrement grillées. Les maintenir dans le four pour les garder au chaud.
  • Quand le nougat devient dur dans de l’eau froide (on le voit car il devient difficile à mélanger au bout de 45 minutes), il est temps de jeter les amandes!
  • Les amandes doivent être chaudes quand on les ajoute dans la pâte de nougat. Sinon cela créerait un choc thermique et le touron durcirait instantanément!!
  • Bien mélanger le tout pour répartir uniformément les amandes. J’en ai mis un peu partout!! Mais on peut s’arrêter deux secondes pour ajouter les amandes qui tombent sur les côtés… Ce geste doit être assez rapide car le nougat va refroidir assez rapidement.
  • Mettre le touron dans le cadre garni d’une feuille de pain azyme en dessous.
  • Et répartir le touron à la main (il n’est plus si chaud que cela!). On peut aplatir le tout assez facilement pour peu que ce soit fait rapidement.
  • Couvrir de la deuxième feuille de pain azyme en l’appuyant fermement sur le touron pour la coller.
  • Passer un couteau tout autour du cadre pour démouler le touron.
  • Puis aplanir au rouleau à pâtisserie pour uniformiser le tout. On peut retourner le touron pour égaliser les deux faces.
  • Laisser ensuite refroidir complètement sur une grille à pâtisserie.
  • Couper ensuite le touron avec une scie à pain (ou mieux ou une scie électrique, voir même une scie sauteuse!). On peut obtenir les formes que l’on souhaite. Simplement couper en deux, on obtient alors le touron classique. Mais on peut poursuivre la coupe en petits carrés…
  • Ou pour une côté plus artisanal, on peut le casser pour obtenir une coupe irrégulière qui met bien en évidence l’intérieur du Touron!!Conserver impérativement le touron dans une boîte hermétique. Si l’on peut y mettre un sachet déshydratant, c’est encore mieux! Ces sachets sont extrêmement efficaces…

This is the recipe for “Turron de Alicante” or . It is a brittle and crunchy Spanish nougat. I have been preparing this recipe in secret for several months! I searched everywhere for a real Alicante turrón recipe, on internet, in Spanish cookbooks, in books of professional confectioners, but without success. The revenues were barely close to the real result! I had to go in blind and fix the recipe over and over again to get the result I was hoping for! I failed a number of times, experimented with different techniques, threw away pounds of honey, sugar and almonds, got angry, and most of all I vowed to get it right! It is therefore with great pride that I finally present it to you. I would like to point out that this recipe is probably for those who like a culinary challenge and that it takes a little bit of patience to achieve it. 
 
 
 
 
Recipe for “Turron de Alicante” or “Touron de Alicante”:
 
-275g raw peeled almonds
-15g of liquefied egg white
-10g of sugar (sugar 1)
-a pinch of cream of tartar
-60g of honey
-25g of glucose syrup
-85g of sugar (sugar 2)
-20g of water
-2 sheets of unleavened bread (from G Detou!)
 
I prepared my turrón in a 16X16cm frame.
Pre-cut the unleavened bread sheets to the inner dimension of the frame! With a ruler and a cutter it’s very easy!
 
 
Put the honey to cook on low heat in a small saucepan. In fact, it is necessary to eliminate as much as possible the water contained in the honey. It is necessary to bring this one to 121°C but by taking its time!
 
 
Meanwhile, in another saucepan, put the sugar 2 (85g), the glucose syrup and the 40g of water on low heat. This mixture must be heated to 150°C, in the large oven.
 
 
When the honey approaches the temperature of the small ball (121°C), begin to assemble the egg white (15g!) with the sugar 1 and the pinch of cream of tartar.
 
 
Add the honey when it reaches the desired temperature. Drizzle over the white while continuing to whisk.
 
 
Never stop whisking this mixture.
 
 
When the sugar reaches 150°C (which is not the case on the picture!), pour it also in net on the honeyed white while still beating!
 
 
The result is a kind of Italian meringue that you must never stop whipping.
 
 
Put this mixture in a boiling water bath. I bought this “magic” pan that has a built-in water bath!
 
 
And this is the longest step… You’ll have to keep stirring that dough in your water bath! The explanation is simple: if we stopped cooking at this moment, we would obtain a kind of nougat which would hardly harden in the refrigerator. It is thus necessary to continue the cooking of the nougat in this water bath to evaporate all the water contained in the whites, the honey, the syrup of sugar to dry the nougat. The more one waits, the more the nougat becomes hard and breakable. It is exactly in this way that one obtains a nougat of Montélimar. Except that for the hard turrón of Alicante, it is necessary to go well beyond this stage to dry almost completely the paste of nougat. Of course, the professionals have machines more powerful than our water bath…. But you can do it without! To obtain the desired firmness, a small amount of dough is taken and dipped in cold water to see how well it has cooked. For this one, I spent almost 45 minutes turning the dough with a spoon in its boiling water bath… This is the time you will probably spend drying the nougat! But be careful, if you double the recipe, it will take longer!
 
 
When I write at the beginning of the recipe that I have tried several methods, I am showing one of my failed experiments here! In certain recipe, they say that it is necessary to dry the nougat in a tank with a blowtorch. So of course I tried… The effect is nice on the picture, but everything has absolutely burned in the tank!!! Even controlling the degree of the flame! I strongly advise against this method! The water bath was the only effective solution…
 
 
While the nougat paste is drying, put the almonds on a baking sheet at 180°C.
 
 
 Watch (while continuing to mix the nougat!!) the almonds, let them cook and brown for 10-12 minutes. They should be lightly toasted. Keep them in the oven to keep them warm.
 
 
 When the nougat becomes hard in cold water (you can see it because it becomes difficult to mix after 45 minutes), it is time to throw away the almonds!
 
 
The almonds must be hot when they are added to the nougat paste. Otherwise it would create a thermal shock and the turrón would harden instantly!
 
 
Mix well to evenly distribute the almonds. I put them everywhere! But we can stop for two seconds to add the almonds that fall on the sides… This gesture must be rather fast because the nougat will cool rather quickly.
 
 
Place the touron in the frame with a sheet of unleavened bread underneath.
 
 
Spread the turrón by hand (it’s not that hot anymore!). It can be flattened quite easily if done quickly.
 
 
Cover with the second sheet of unleavened bread, pressing it firmly onto the torte to seal it.
 
 
Pass a knife around the frame to remove the turrón from the mould.
 
 
Then flatten with a rolling pin to even out. The turrón can be turned over to even out both sides.
 
 
Then let cool completely on a wire rack.
 
 
Then cut the turrón with a bread saw (or better yet, an electric saw, or even a jigsaw!). You can get any shape you want. Simply cut in half, you get the classic touron. But we can continue the cut in small squares…
 
 
 
 
Or for a more artisanal side, it can be broken to obtain an irregular cut which highlights the interior of the Touron!
It is essential to keep the turrón in an airtight box. If you can put a desiccant bag in it, it’s even better! These bags are extremely effective…
