It’s time for me to get a new waffle maker so I can show you some better ones! But in the meantime I give you my recipe that I have kept preciously since my childhood. This is the one I’ve always preferred because it makes delicious waffles that are crisp and light on the outside and melt-in-the-mouth on the inside. Moreover, they are not too sweet and you can make up for it with a lot of forbidden things…
Recipe for fairground waffles:
-500g of flour
-150g of butter
-6 eggs
-50g of sugar
-750ml of semi-skimmed milk
-1 tablespoon of rum
Separate the yolks from the whites.
Put the melted butter, sugar and yolks in a bowl.
Add the rum.
Then about a third of the flour.
Start mixing with a hand whisk and add a little milk.
Proceed in this way, alternating a little flour and milk until all ingredients are used up. This prevents the formation of lumps.
The dough is perfectly smooth.
Beat the egg whites until stiff.
Add the egg whites spoonful by spoonful to the previous mixture, lifting the dough so they don’t fall out.
Heat the waffle iron and fill the machine with batter.
Cook as indicated by the brand name used.
Re-cut the waffles (if necessary, as some machines make beautiful waffles by the unit) and serve with powdered sugar, fruit etc…
