Chocolate orange oatmeal cookies

I just came back from Ireland, and I had seen in a market some cakes about the same. So they’re not cookies per se, but rather somewhere between a cookie and a flapjack. The consistency is fluffy and very similar to a flapjack. They are not very sweet and the flavor of the orange and the chocolate combine perfectly. Half a cake is enough to settle the stomach for a snack! But I can’t help it, that’s what I like! 

Recipe for a dozen cookies:
  • 185g of cane sugar
  • 1 egg 
  • 180g fat (butter or margarine, see below)
  • 230g of oatmeal
  • 230g of flour T55
  • zest of one orange
  • 135g of milk chocolate in pieces, chips or chunks
  • 60g of milk chocolate for the decoration

Mix the cane sugar, egg and fat. I used Fleurier here because I wanted a very flapjack feel with a very particular consistency. I took this brand because it is a mixture of butter and margarine, but you can very well put only butter! 

You must obtain a cream.

Add flour and oats.

Mix and add the milk chocolate. I have here Cacao Barry chocolate prices. 

Add the orange zest.

Mix well.

Make 95g balls and flatten by hand.

Bake at 160°C for 17 minutes.

They remain fairly white and not overcooked in the center. It’s normal!

Melt the chocolate for the decoration.

Make a small cone out of parchment paper.

And pour the chocolate as you like.

Let the chocolate cool and then put the cakes in an airtight box to store them.
