Hazelnut paste with Cocoa

I hesitated for a long time to publish this recipe because I imagine you are waiting for the nutella recipe, but that is not the case here. It is simply a homemade hazelnut paste with cocoa that you can spread on bread or brioche! It will be necessary to make a hazelnut praline. However, you will be limited by your blender. It is necessary to know that to make very smooth praline pastes, the industrialists have rollers which give a velvetiness impossible to obtain at home. 
But you can also make this hazelnut paste with cocoa at home: there will be just a little extra crunch! 

Recipe:

-425g of homemade hazelnut praline (recipe HERE)
-15g of whole milk powder
-45g of unsweetened cocoa powder
-40g of oil (to soften and brighten)
-15g of honey
-a good pinch of salt
-1/2 teaspoon liquid vanilla

First, make a hazelnut-only praline with 225g of hazelnuts and 225g of sugar (with the losses in the processor and what you’ll eat, there will be 425g left!). For the recipe it’s HERE!

Mix the hazelnut praline for a long time so that it becomes as soft as possible. 
Add the cocoa powder (in the photo it’s in a bowl, but do it all in a blender).




Mix quickly then add the whole milk powder, liquid vanilla and salt.




Blend until well incorporated then add the honey.



Continue by pouring the oil: Take a neutral oil like rapeseed oil. This will give a shine and fluidity that will have been compromised by the cocoa powder. You’re already done!
Store in a jam jar and spread generously on homemade bread or brioche…
