Upside Down Peach Cake

I went to the market the other day to buy some peaches. I had tasted some very good ones a week before, but this time I came across peaches that turned out mushy and without juice. Big disappointment, yet I had gone to the same place and taken the same fruits which had the same aspect. I didn’t want to throw them away, I preferred to make a delicious upside down cake out of them. I lightly precook the peaches beforehand, and they become very tasty and juicy. The dough on top is addictive! And the mix between the two is just perfect. 

For a 26x17cm cake:

  • 7-8 large white or yellow peaches
  • 200g of sugar
  • 165g of semi-salted butter
  • 225g of flour
  • 2 large eggs
  • 1 teaspoon of liquid vanilla

For this recipe, as I said, I used peaches that were perfect for baking. But even very good peaches will make a very good cake! I only have 4 in the picture, but I ended up putting in almost 8. As much as the mold would allow! 
Peel them and cut them into large pieces. Place them in a saucepan with two tablespoons of sugar. 

Cook for 5-7 minutes over moderate heat.

They will give back some juice, it’s perfect! Pour them into the dish.

Make the dough by mixing the sugar and butter. 

Add flour, eggs and vanilla.

Mix well and pour over the peaches. 

Bake for 35 minutes at 170°C. Adapt the cooking to your own oven!

To be enjoyed warm or cold!
