Baklawas aux Amandes

Merci à Hakim de m’avoir appris cette recette fantastique! C’était pour moi réellement fabuleux de pouvoir les réaliser avec un expert, surtout que je désirais connaitre les secrets des baklawas depuis un moment. J’avais déjà essayé quand j’étais adolescent, mais avec des feuilles de brick. Mais je préfère mille fois cette recette artisanale! Nous avons réalisé les baklawas dans un moule géant et j’ai donc divisé la recette par deux pour convenir à des moules plus adaptés à nos fours. Je pense que l’on peut sans souci combler un moule à manqué de 38cm (chez MORA) de diamètre avec les quantités indiquées…

Instructions
 

  • Tout d’abord voici le Smen qui est en fait du beurre clarifié (tout comme le Ghee indien) qui prend un goût d’amande avec le temps. Il se conserve donc très bien et longtemps. On peut le trouver soit vers Barbès, Belleville à Paris ou à Saint Denis. Mais encore dans les épiceries indiennes sous le nom de ghee   dans le quartier de Gare du Nord ou vers le Passage Brady dans le quartier Saint Denis.
  • On peut se passer du smen et mettre du beurre clarifié maison car le smen peut avoir un goût trop prononcé pour certains. 
  • Commencer par préparer la farce. Mettre les amandes hachées au mixeur (eh oui!!). Il faut les hacher un peu plus finement encore. Laisser tourner le mixeur pendant 20 secondes et vérifier le broyage des amandes.
  • Elles doivent être moulues mais pas en poudre fine! 
  • Ajouter la cannelle.
  • Et le sucre. 
  • Bien mélanger puis ajouter un peu d’eau de fleur d’oranger vanillée. Le mélange doit juste coller et pouvoir s’agglomérer si on le sert dans la paume de la main, mais pas plus!
  • La texture est celle d’un sable gros mouillé.
  • Préparer la pâte en mettant la farine, l’oeuf et le beurre mou dans un bol. Mélanger et ajouter un peu d’eau pour parfaire la pâte. Laisser tourner la machine (si on utilise un robot) pendant 5 minutes pour bien pétrir la pâte.Diviser la boule ainsi obtenue en 8 petites boules identiques.
  • Etaler une première boule de pâte assez finement, sur un plan de travail fariné.
  • Faire de même avec 3 autres pâtons. On obtient donc 4 feuilles de pâte.
  • Fariner généreusement le plan de travail et mettre une première feuille. Fariner de nouveau très généreusement la feuille puis ajouter une deuxième feuille sur la première farinée. Recommencer avec en tout 4 feuilles avec en sandwich, beaucoup de farine.
  • Etaler les 4 feuilles ENSEMBLE, cette fois beaucoup plus finement, de la taille du moule utilise, avec une marge (pour dépasser le moule)
  • Badigeonner au pinceau le moule de smen fondu. 
  • Pour décoller la première feuille de pâte, l’enrouler autour d’un fin rouleau à pâtisserie en enlevant l’éxcédent de farine au fur et à mesure de l’enroulement (avec une balayette réservée à cet usage ou à la main avec un torchon propre et sec).
  • Puis dérouler la feuille sur le moule graissé
  • Asperger de smen fondu. Pour les feuilles du bas, pas besoin de s’embêter à bien passer le pinceau. 
  • Placer une deuxième feuille de pâte sur la première, puis asperger de nouveau de smen fondu.
  • Faire la même chose pour les 2 dernières mais sans graisser la dernière sur sa surface. On se retrouve donc avec 4 feuilles sur le moule. 
  • Ajouter la farce aux amandes hachées. Préchauffer le four à 190°C.
  • Presser sur le centre puis sur les côtés en lâchant la pression qu’exercent les feuilles de pâte. Soulever légèrement la pâte à l’extérieur du moule pour pouvoir plaquer la farce sur le bord intérieur du moule. 
  • Racler la surface en s’aider d’une raclette trempée dans l’eau de fleur d’oranger vanillée. 
  • Couper la pâte juste au dessus du niveau atteint par la farce. 
  • Puis rabattre la pâte sur la farce sur tout le tour du moule.
  • Piquer la farce avec un couteau. 
  • Puis mettre de nouveau des feuilles de pâte en s’assurant cette fois de bien badigeonner généreusement de smen fondu au pinceau sur toute leur surface. Faire de même pour les autres feuilles sauf pour la dernière. 
  • La dernière du dessus doit rester vierge de smen. Couper la pâte au niveau du bord du moule avec un couteau. 
  • Puis enfoncer la pâte vers le bas sur le bord intérieur du moule.
  • Couper avec un couteau le baklawa en enfonçant bien la lame. Réaliser des bandes dans un sens puis dans l’autre pour créer les losanges typiques de cette pâtisserie. 
  • Préparer la dorure en mélangeant un oeuf et deux jaunes. Bien mélanger puis appliquer au pinceau une couche de dorure sur toute la surface des baklawas.
  • Mettre une amande nature pelée au centre de chaque losange en l’enfonçant légèrement. 
  • Les baklawas sont prêts à passer au four!
  • Cuire une heure à 190°C-200°C en surveillant ves la fin de cuisson et en adaptant à son propre four. 
  • Chauffer légèrement le miel avec la fleur d’oranger et verser le tout sur le moule brûlant dès sa sortie du four.
  • Les baklawas vont « boire » le miel 
  • Laisser reposer et refroidir complètement une nuit entière avant de les dévorer avec un thé à la menthe!

Here is finally the recipe for one of my favorite sweets! Thanks to Hakim and the ” Délice de la Casbah “, I was able to get my hands dirty and make these fabulous little cakes. There are endless variations on baklawas. Here, the dough is “homemade” with 4 sheets below and 4 above. We can go up to 7 but the work will take longer. Nothing is impossible here, just a bit of material and above all good honey and smen.

I had already tried when I was a teenager, but with pastry sheets. But I prefer this homemade recipe a thousand times over! We made the baklawas in a giant mold and so I divided the recipe in half to suit molds more suited to our ovens. I think you can easily fill a 38cm springform pan (at MORA) in diameter with the quantities indicated…  

Recipe for “baklawas” for a mold 28 or 30 cm in diameter:

Dough:
-500g of flour
-250g of butter
-1 egg
-water (orange blossom if possible)


Prank call:
-500g chopped almonds
-125g of sugar
-cinnamon
-vanilla orange blossom water (1 teaspoon for 500ml of orange blossom water)


-500ml liquid honey
-50 to 75ml of orange blossom water
-300g of smen (see photo below) or clarified butter
– plain peeled almonds
– gilding: 1 egg + 2 yolks

First of all here is the Smen which is in fact clarified butter (just like the Indian Ghee) which takes on an almond flavor over time. It therefore keeps very well and for a long time. It can be found either towards Barbès, Belleville in Paris or in Saint Denis. But still in Indian grocery stores as ghee  in the Gare du Nord district or towards Passage Brady in the Saint Denis district.

 

 
You can skip the smen and put homemade clarified butter because the smen may taste too strong for some people. 
 



Start by preparing the stuffing. Put the chopped almonds in the blender (yes!!). You have to chop them a little more finely. Let the mixer run for 20 seconds and check the crushing of the almonds.

 
They should be ground but not fine powder! 

 

 
Add cinnamon.

 

 

And the sugar. 

 

 
Mix well then add a little vanilla orange blossom water. The mixture should just stick and be able  agglomerate  if it is served in the palm of the hand, but no more!

 

 
The texture is that of wet coarse sand. 

 

 
Prepare the dough by putting the flour, egg and soft butter in a bowl. Mix and add a little water to perfect the dough. Let the machine run (if using a robot) for 5 minutes to knead the dough well.
Divide the ball thus obtained into 8 small identical balls.
 
 
Roll out a first ball of dough fairly thinly, on a floured work surface.
 
 
Do the same with 3 other dough pieces. So you get 4 sheets of dough. 
 
 
Flour  generously  the work plan and put a first sheet. Flour again very  generously the sheet then add a second sheet on the first floured. Start again with a total of 4 sheets with a sandwich, lots of flour. 
 
 
Roll out the 4 sheets TOGETHER, this time much thinner, the size of the mold used, with a margin (to exceed the mold).
 
 
Brush the mold with melted smen. 
 
 
To take off the first sheet of dough, roll it around a thin rolling pin, removing the excess flour as you roll it (with a brush reserved for this purpose or by hand with a cloth clean and dry).
 
 

Then unroll the sheet on the greased mold.  

 
Sprinkle with melted smen. For the lower leaves, there’s no need to bother with brushing well. 

 

 
Place a second sheet of dough on top of the first, then sprinkle again with melted smen. 

 

 
Do the same for the last 2 but without greasing the last one on its surface. So we end up with 4 sheets on the mold. 

 

 
Add the chopped almond stuffing. 
Preheat the oven to 190°C.

 

 
Press on the center then on the sides in  letting go  pressure  that exercise  the sheets of dough. Slightly lift the dough on the outside of the mold to be able to press the stuffing onto the inside edge of the mold. 

 

 
Scrape the surface using a squeegee dipped in vanilla orange blossom water. 

 

 
Cut the dough just above the level reached by the stuffing. 
 
 
Then fold the dough over the stuffing all around the mold. 

 

 
Prick the stuffing with a knife. 
 
 
Then put the sheets of dough again, making sure this time to brush well  generously of melted smen with a brush over their entire surface. Do the same for the other sheets except for the last one. 

 

 
The last of the top must remain free of smen. Cut the dough at the edge of the mold with a knife. 

 

 
Then press the dough down to the inside edge of the pan.

 

 

 
Cut with a knife the baklawa by pushing the blade well. Make strips in one direction then in the other to create the diamonds  typical  of this pastry. 

 

 
Prepare the egg wash by mixing an egg and two yolks. Mix well then apply with a brush a coat of glaze over the entire surface of the baklawas. 

 

 
Place a plain, peeled almond in the center of each diamond, pressing it in slightly. 

 

 

 
The baklawas are ready to go in the oven!

 

 
Bake for one hour at 190°C-200°C, monitoring the end of cooking and adapting to your own oven. 

 

 
Slightly heat the honey with the orange blossom and pour the mixture over the hot mold as soon as it comes out of the oven.

 

 
The baklawas will “drink” the honey 

 

 
Let stand and cool  completely  a whole night before devouring them with a mint tea!
