Apple, Pear and Chocolate Crumble

The crumble is really easy to make! There is an infinite variety of them. I’ll give you just one example and you can imagine anything. I’ve had this recipe since I was 14 years old and I have tried many others since then but this one really has my favor! A really crisp, simple pastry with a very pleasant brown sugar taste that contrasts perfectly with the sweetness of the fruit and the creaminess of the chocolate.

Recipe of the “crumble” apples pears chocolate:
crumble dough:
-225g brown sugar
-225g of flour
-120g of soft butter at room temperature
-8 apples
-8 pears
-20g of butter
-40g of brown sugar
-a few pieces of 65% cocoa chocolate
Place flour and brown sugar in a large bowl.
Add the butter.
Knead the whole until perfect incorporation of the butter. It doesn’t matter if it takes time. The dough can then be gathered into a ball and broken into the smaller pieces that are so special to crumbles.
Peel apples, pears (not scoobies!) or any other fruit chosen for the recipe.  
Put the 20g of butter in a large pan and put the apples and pears. Sprinkle with brown sugar. Leave on low heat until the fruit is completely cooked.

Bernard’s advice:
I start covered (with a lid) and then continue without it so that the juice evaporates a little. This way the crumble will not be liquid!
Preheat the oven to 180°C.
Once the fruit is cooked, pour it into a casserole dish. Sprinkle with chocolate pieces. You can put as much as you want, but it is better not to add too much because the crumble might be a little bit sickening…
Crumble the crumble mixture over the fruit and pour it all over the fruit.  You don’t have to put all the dough as you can put more!
Bake at 180°C for 25-30 minutes , watching at the end to adjust the baking to your own oven! The crumble should be golden brown all over and the fruit should start to caramelize without burning!
It can be served hot, cold, with ice cream or heavy cream!
