Even with the beautiful sunshine we have, I want to cook good things. I had some leftover praline dough that I had made and I had been thinking for a while about making cookies from buckwheat and praline. With good big chocolate chips, the result is insane ! Even the dough is absolutely delicious… For once I bake the cookies in circles so they are all the same size. But you can do without it. It was just for fun and a change. Anyway, I’m enjoying it, even though it’s hot!
Recipe for a dozen cookies:
- 115g of sugar
- 75g of brown vergeoise
- 150g of semi-salted butter
- 1 egg
- 1 teaspoon of liquid vanilla
- 85g of praline paste (recipe HERE)
- 170g of flour
- 80g buckwheat flour
- 150g of milk chocolate
Place the sugars and butter in the bowl of your food processor or in a container.
Mix with the leaf or with a wooden spoon to obtain a kind of cream.
Add egg, vanilla and praline paste.
Mix and add the flour and buckwheat flour.
A little mix, then finish with the chocolate.
For this recipe, I baked the cookies in 8.5cm diameter circles. I placed 75g dumplings in it.
Bake for 12 minutes at 170°C. The cookies should not be overcooked. They will firm up after cooking.
Enjoy them warm or fresh!
