Carrot and Sweet Spice Soup

It may not be freezing cold right now, but since it’s winter I still make soups in the evening. It only takes 10 minutes to prepare, it cooks itself and you get your fill of vegetables for less! Soups yes, but I want it to taste good… And a little butter and cream never hurt… right? So today I propose you my carrot soup with sweet spices which will put some sun in your bowl and will make all the family friendly…!

Recipe for the rich carrot soup with sweet spices:
-800g of carrots
-200g sweet potato (white or orange)
-1 onion
-1.1 liter of vegetable or chicken broth (or at worst  1.1 liter of water with 2 magi cubes and 1 chicken cube)
-40g of butter
-160g of full cream
-3/4 teaspoon yellow curry powder
-1/2 teaspoon cumin seeds

-1/4

 teaspoon

 turmeric
-salt pepper

-1 carrot for the garnish

 Start by peeling the carrots.

For the 200g of sweet potato, it corresponds roughly to 1/2 potato. But you can put it in whole if you want. In this case, it will be necessary to add 150ml of water afterwards. 

Peel and cut the sweet potato half.

Place the onion cut in 4, carrots, potato, salt, pepper and broth in the casserole.

Screw in thoroughly and bring to a boil. When the valve starts to whistle, lower the heat and cook for 15 to 20 minutes. Without a casserole dish, the cooking time will be longer. Just make sure the carrots are cooked. 

Remove the valve and let the steam escape. I don’t know about you, but I love the sound and smell of it…! 

The vegetables are cooked just right!

Run the hand blender through the soup.

Add the cream and butter.

Then finally the spices.

Blend again until the cumin has been reduced to a powder. I prefer it in grain form so that its flavor is preserved. 

Check the texture of the soup and its seasoning. Add a little water if necessary.

Peel and cut the carrot into 1mm thick slices.

Cut the slices into sticks and then into cubes.

Bring a small pot of salted water to a boil and add the carrot cubes.

Cook them for 2 minutes and 30 seconds, then drain them. Rinse with cold water to stop cooking.

All that’s left to do is to serve the soup very hot with the carrot cubes and a little spice…!
