Poulpe Grillé

Un véritable coup de foudre culinaire comme j’aime en vivre ! Je n’ai par exemple redécouvert les épinards qu’à l’âge de 25 ans. J’avais toujours détesté cela jusqu’à regoûter à l’âge adulte. La même chose m’est arrivée avec le poulpe grillé. Je suis allé deux fois en voyages culinaires en Grèce l’année dernière. Une première dans les Cyclades (voir dans mes voyages culinaires ICI !) puis à Athènes quelques mois plus tard. Là j’y ai dégusté du poulpe et je suis enfin passé outre la barrière des tentacules. Et là : révélation ! J’en suis devenu fou. J’en ai commandé à chaque fois, cherchant à comprendre ce que j’aimais. D’abord j’adore les petits poulpes ou de taille moyenne, très tendres et bien grillés qui donnent presque un petit côté croustillant. C’est ce que j’ai reproduit dans la recette que je vous propose aujourd’hui. L’important est la cuisson au bouillon pour avoir la tendreté désirée !

  • Pour cette recette, j’ai pris des petits poulpes et un poulpe moyen pour tenter les différences de temps de cuisson. Tout d’abord demandez à votre poissonnier de préparer les poulpes : il va couper la partie contenant les yeux et le bec. Pour le poulpe moyen je l’ai fait tout seul, pour les petits mon poissonnier s’en est chargé ! Il n’y a là rien de compliqué. Il y aura d’un côté les 8 tentacules et de l’autre la tête vidée. Mettez ensuite le tout au congélateur une nuit. Le lendemain, laissez reprendre à température ambiante. Cela va attendrir un peu la chair. 
  • Faites bouillir une grande marmite d’eau avec les échalotes épluchées et coupées en gros morceaux, les feuilles de laurier et le vin blanc. Quand ça bout, ajoutez les poulpes. À la reprise de l’ébullition, comptez bien 25 à 30 minutes pour les plus petits et 35 à 40 pour la taille moyenne. 
  • Pour savoir si le poulpe est cuit, il suffit d’enfoncer une fourchette dans un tentacule. Si c’est la consistance d’un pneu, poursuivez la cuisson.
  • Elle doit rentrer sans trop de difficultés. La consistance finale est déjà censée être là.
  • Pour les plus gros morceaux, coupez-les en morceaux plus petits. 
  • Pour les petits poulpes, séparez les tentacules individuellement. Pour la tête qui ressemble à un capuchon, coupez-la en deux. 
  • Mettez tous les morceaux de poulpe dans un récipient.
  • Ajoutez les gousses d’ail écrasées au presse-ail, arrosez d’huile d’olive.
  • Ajoutez le jus d’un demi-citron.
  • Salez et poivrez à votre goût. Je mets un tout peu de romarin, juste un peu !!
  • Laissez mariner deux bonnes heures au frais. Pour la cuisson finale, il y a trois possibilités, voire 4. Vous pouvez les griller au barbecue, au four avec le grill ou à la poêle. J’ai préféré la quatrième : la plancha. Il y a trois ans, Krampouz m’avait fourni une plancha. C’est le moment de la ressortir. 
  • Je fais préchauffer à 300°C. Quand le témoin lumineux s’éteint, je mets le poulpe. Remuez de temps en temps avec une spatule en métal ou un couteau à enduit, ce qui fonctionne parfaitement.
  • Le poulpe caramélise et prend une belle couleur.
  • J’en ai profité pour faire griller des asperges avec juste un filet d’huile d’olive.
  • Pour servir, vous pourrez accompagner les poulpes avec ce que vous voulez. Pour moi cela a été une simple mais délicieuse purée maison. Avec de la crème et du beurre salé, bien salée et poivrée, un soupçon de noix de muscade. Le moelleux de la purée et le petit croustillant par endroit du poulpe grillé se marient à merveille !! Pour ceux qui se poseront la question, j’ai mis des petites fleurs de basilic thaï. J’en fais pousser dans mon atelier et en ce moment j’ai plein de petites fleurs délicieusement parfumées !

There I tasted octopus and I finally got over the tentacle barrier. And then: revelation! I went crazy about it. I ordered them every time, trying to figure out what I liked. First of all I love the small or medium octopus, very tender and well grilled which almost gives a little crispness. This is what I have reproduced in the recipe I am offering you today. The important thing is to cook the fish in the broth to get the desired tenderness! 

Recipe for 6 people:

  • 1,5kg of fresh octopus
  • 1 onion or 2 shallots
  • 6 bay leaves
  • 25cl of white wine
  • 4 garlic cloves 
  • juice of half a lemon
  • olive oil
  • salt pepper

To serve:

  • homemade mashed potatoes, grilled vegetables

Instructions:

For this recipe, I used small octopus and medium octopus to try the differences in cooking times. First, ask your fishmonger to prepare the octopus: he will cut the part containing the eyes and the beak. For the medium octopus I did it by myself, for the small ones my fishmonger took care of it! There is nothing complicated about it. There will be on one side the 8 tentacles and on the other the emptied head. 
Then put it in the freezer overnight. The next day, let it come to room temperature. This will tenderize the flesh a bit. 

 

 

Boil a large pot of water with the peeled and coarsely chopped shallots, bay leaves and white wine. When it boils, add the octopus. When the boiling resumes, allow 25 to 30 minutes for the smallest and 35 to 40 minutes for the medium size. 

 

 
To know if the octopus is cooked, you just have to stick a fork in a tentacle. If it is the consistency of a tire, continue cooking. 

 

 
It should fit without too much difficulty. ????The final consistency is already supposed to be there.
 
 
For larger pieces, cut them into smaller pieces. 

 

 
For small octopuses, separate the tentacles individually. For the head that looks like a cap, cut it in half. 

 

Put all the pieces of octopus in a container.

Add the crushed garlic cloves with a garlic press, sprinkle with olive oil.

Add the juice of half a lemon.

Put salt and pepper at your taste. I put a little rosemary, just a little !

 

Let marinate for a good two hours in a cool place. For the final cooking, there are three or even four possibilities. You can grill them on the barbecue, in the oven with the grill or in the pan. I preferred the fourth: the plancha. Three years ago, Krampouz provided me with a plancha. It’s time to bring it out. 

 

I preheat to 300°C. When the indicator light goes off, I put the octopus on. Stir occasionally with a metal spatula or spackle knife, which works great.

The octopus caramelizes and takes a beautiful color.

I took the opportunity to grill some asparagus with just a drizzle of olive oil.

 
To serve, you can accompany the octopus with whatever you want. For me it was a simple but delicious homemade mashed potato. With cream and salted butter, well salted and peppered, a hint of nutmeg. The softness of the mashed potatoes and the crispness of the grilled octopus are a perfect match! For those of you who are wondering, I put little flowers of Thai basil. I grow them in my studio and right now I have lots of deliciously scented little flowers!
