Labneh au zaatar

Une très bonne amie Gaëlle, m’a un jour fait ce plat à servir en apéritif ou en entrée. C’est savoureux, frais et délicieux ! Son petit plus : des pignons de pin grillés qui viennent agrémenter le labneh, une sorte de cream cheese, parsemé de mélange au zaatar, sésame et sumac. Avec plein d’huile d’olive et un bon pain libanais, c’est un voyage pour les yeux et les papilles !

  • Voici le zaatar. Vous le trouverez dans les épiceries exotiques ou sur internet. Cela ressemble un peu à de l’origan.
  • Versez le zaatar dans un récipient.
  • Ajoutez le sumac. Cette épice est légèrement citronnée et se trouve dans les mêmes boutiques que le zaatar.
  • Mettez les graines de sésame et le sel.
  • Mélangez, c’est terminé ! Vous pourrez garder ce mélange des mois dans une boite hermétique.
  • Faites griller les pignons de pin dans une petite poêle sur feu modéré. Ils doivent se colorer doucement.
  • Et voici le labneh. C’est un peu comme du philadelphia cream cheese, mais en plus salé et plus savoureux !
  • Versez une bonne couche d’un centimètre dans un plat.
  • Saupoudrez du mélange au zaatar et arrosez généreusement d’huile d’olive.
  • Parsemez de pignons de pin grillés et régalez-vous avec un bon pain libanais, grillé ou non !

A very good friend Gaëlle, once made me this dish to serve as an aperitif or starter. It’s tasty, fresh and delicious! Its little extra: toasted pine nuts that decorate the labneh, a kind of cream cheese, sprinkled with zaatar, sesame and sumac mixture. With a lot of olive oil and a good Lebanese bread, it’s a trip for the eyes and the taste buds!

 

Recette du LABNEH AU ZAATAR : 

For the mixture:

  • 50g of zaatar
  • 100g of toasted sesame seeds
  • 100g of sumac
  • 10g of salt

For the rest :

  • a jar of labneh
  • 100g of pine nuts
  • olive oil
  • Lebanese flatbread

Instructions : 

This is the zaatar. You can find it in exotic grocery stores or on the internet. It looks a bit like oregano.

Pour the zaatar into a container.

Add the sumac. This spice is slightly lemony and can be found in the same stores as zaatar.

Add the sesame seeds and salt.

 

Mix it up, it’s done! You can keep this mixture for months in an airtight box.

Toast the pine nuts in a small skillet over moderate heat. They should colour gently.

 

And here is the labneh. It’s a bit like philadelphia cream cheese, but saltier and tastier!

Pour a good 1 cm layer into a dish.

Sprinkle with zaatar mixture and drizzle generously with olive oil.

Sprinkle with toasted pine nuts and enjoy with a good Lebanese bread, toasted or not!

J’adore ce plat ; j’en fais très régulièrement, et devant ces photos si gourmandes, je ne peux que saliver !

Il est facilement possible de faire soit même du labneh. Il suffit de prendre un yaourt a la grec (vache ou chèvre, voir mélanger les deux) de mettre une cuillère a café de sel a fromage (possible de mettre du sel de table), de mélanger le tout, puis de le mettre a égoutter dans un tissus a fromage pour 24 a 48h selon la texture préférée (plus il reste, plus il sera sec)
