In Sicily, in the morning when the weather is hot, it’s almond granita and buns. This granita requires only a few ingredients: good almonds, sugar and water. In a few minutes everything is ready for the turbine and in 30 minutes the job is done. You can then enjoy a refreshing granita!
Recipe for one liter of granita:
- 160g of almonds
- 155g of sugar
- 670g of water
- 1/2 teaspoon bitter almond flavor (optional)
For this recipe, use almonds without skins.
Pour them into a blender with the sugar and water. I add half a teaspoon of bitter almond flavoring.
Mix on high for 4-5 minutes.
No more almond particles should be visible.
Pour into the ice cream maker.
The whole thing will take quite a while, about 20 minutes.
There is a moment when the granita takes a funny look and it’s normal, everything goes back in order afterwards!

In the end, everything is perfect.
The best moment is the tasting directly from the turbine. The granita is then unctuous. Otherwise, put it in an airtight jar in the freezer. In the next 3 hours, it will still be fine.
