Gaufres Liégeoises

Je me retenais depuis des années. Quand je marchais devant un stand de gaufres liégeoises, je bavais et je me disais que ce n’était pas raisonnable, alors je passais mon chemin. Quand j’ai enfin eu mon gaufrier, j’ai dévoré l’équivalent de toutes ces années de privation intense !! Enfin ! Elles sont si délicieuses, riches et moelleuses, avec tout ce sucre qui caramélise en surface, que je ne me suis presque pas senti coupable. Je n’ai tout simplement pas pu résister. De toutes les gaufres, ce sont mes préférées. Avec le beurre qu’il y a dedans, cela ne m’étonne pas ! J’ai réalisé mes gaufres avec un gaufrier professionnel, mais on peut évidemment les faire dans un gaufrier plus classique.

  • Versez la farine, le sucre semoule et la levure sèche dans la cuve de votre robot ou dans un grand récipient. 
  • Mélangez puis versez les œufs et le lait. 
  • Pétrissez la pâte pendant une dizaine de minutes avec le crochet.
  • Ajoutez le beurre coupé en morceaux.
  • Continuez de pétrir pendant encore 5 minutes.
  • Laissez lever la pâte pendant 1h30 avec un linge propre sur le bol.
  • Après la pousse de 1h30, ajoutez le sucre perlé et mélanger de nouveau avec le crochet.
  • Pesez des boules de 100g. 
  • Roulez-les en boudins pas trop longs. Vous pouvez aussi les rouler dans un peu de sucre glace, elles caraméliseront encore plus. 
  • Pour cette recette, j’ai utilisé mon gaufrier Krampouz pro. Une petite folie, mais le résultat est génial. Vous pouvez aussi utiliser un gaufrier plus classique, je vous rassure. J’avais présenté la marque bretonne, il y a bien longtemps pour les crêpes (voir recette ICI). Pour les gaufres de Liège, préchauffez le fer à 180°C. 
  • Posez un pâton au centre des fers. Si vous avez un gaufrier pro, il faudra le culotter avant, suivant le mode d’emploi.
  • Fermez le gaufrier. Avec un pro, les fers sont très lourds et écrasent donc tout de suite la pâte. Avec un gaufrier classique, fermez-le bien en pressant. 
  • Si vous avez cette option, retournez les fers. 
  • Laissez cuire 5 minutes. Vérifiez bien la cuisson. Les Gaufres doivent prendre une belle couleur.
  • Sortez-les délicatement avec une fourchette ou un pic à gaufre.
  • Laissez-les tiédir sur une grille à pâtisserie pendant 5-10 minutes avant de les engloutir !
  • Vous pouvez les réchauffer le lendemain en les passant au grille-pain une minute. Un délice !

I had been holding back for years. When I walked past a Liège waffle stand, I drooled and thought it was unreasonable, so I walked away. When I finally got my waffle iron, I devoured the equivalent of all those years of intense deprivation!!! Finally! They are so delicious, rich and chewy, with all that sugar caramelizing on the surface, that I almost didn’t feel guilty. I simply could not resist. Of all the waffles, these are my favorite. With the butter in it, I’m not surprised! I made my waffles with a professional waffle iron, but you can obviously make them in a more traditional waffle iron. 

Ingredients for more than a dozen waffles:

    • 500g of T55 flour
    • 30g of caster sugar
    • 1 teaspoon of dry baker’s yeast (or 10g of fresh yeast)
    • 2 eggs
    • 220g of semi-skimmed milk
    • 285g of butter (I use half sweet butter and half semi-salted butter)
    • 250g of pearl sugar

Instructions:

Pour the flour, caster sugar and dry yeast into the bowl of your food processor or into a large container. 
Mix and pour in the eggs and milk. 

Knead the dough for about ten minutes with the hook.

Add the butter cut into pieces.

Continue kneading for another 5 minutes.

Let the dough rise for 1 1/2 hours with a clean cloth over the bowl.

After the 1.5 hours, add the pearl sugar and mix again with the hook.

Weigh 100g balls. 
Roll them into not too long sausages. You can also roll them in a little powdered sugar, they will caramelize even more. 
For this recipe, I used my Krampouz pro waffle maker. A little crazy, but the result is great. You can also use a more classic waffle iron, I reassure you. I had introduced the Breton brand, a long time ago for the pancakes (see recipe HERE). 
For the Liege waffles, preheat the iron to 180°C. 

Place a dough piece in the center of the irons. If you have a professional waffle iron, you will need to bottom it first, following the instructions.

Close the waffle iron. With a pro, the irons are very heavy and therefore crush the dough right away. With a classic waffle iron, close it well by pressing. 
If you have this option, turn the irons over. 

Let cook for 5 minutes. Check the cooking process. The waffles should turn a nice color.

Carefully remove them with a fork or waffle iron.

Let them cool on a wire rack for 5-10 minutes before eating them!

You can reheat them the next day by running them through the toaster for a minute. A delight!
