Foie Gras (2ème méthode à l'eau bouillante)

Voici la deuxième méthode de cuisson du foie gras. Celle ci est vraiment très simple. Même si je préfère toujours la première version, cette recette a l’avantage de se cuire toute seule sans surveillance et  sans four! Et j’avoue aimer aussi ces tranches à l’allure artisanale…!
Pour cette recette il faut donc un foie gras. Pour l’assaisonement et enlever les veines je vous invite à aller voir le début de la recette de la terrine de foie gras.
Nous en sommes donc au point où le foie gras est à température ambiante, salé, poivré et épicé. On peut choisir la recette que l’on souhaite, je n’explique ici que la méthode de cuisson.Pour ma part, sur les photos, j’ai réalisé un foie gras au rhum et mélange de quatre épices avec une bonne pincée de sucre sur chaque face.

Instructions
 

  • Il suffit de poser le foie sur un morceau de film étirable comme sur la photo ci-dessous.
  • Il faut réaliser 2 tours avec le rouleau de film étirable puis le déchirer pour bien l’envelopper.
  • Envelopper le foie gras avec le film mais cette fois dans l’autre sens toujours avec deux tours.
  • Il suffit de faire 10 fois cette opération, 5 fois dans un sens et 5 fois dans l’autre. On obtient alors un « boudin » de foie.
  • Il suffit maintenant de faire bouillir 1 litre d’eau par 100g de foie. Par exemple si le foie pèse 500g je vais faire bouillir 5 litres d’eau.
  • Une foie que l’eau bout, arrêter le feu, (et enlever de la plaque si l'on cuisine sur de l’électrique car ces plaques restent chaudes longtemps!) et plonger le foie gras dans l’eau.
  • L’opération la plus délicate consiste sans doute à submerger le foie dans l’eau bouillante! Tous les moyens sont bons pour y arriver!!
  • Maintenant on laisse le foie gras submergé tout seul et il suffit de récupérer le foie gras quand l’eau est redescendue à température ambiante. Cela peut prendre du temps. Bien essuyer le foie gras et le mettre au réfrigérateur au moins 5 jours avant de le consommer.
  • Le jour J, enlever le film étirable, puis enlever la « coque » de gras (le gras se trouve tout autour et protège le foie) et couper le foie en tranches!

Here is the second method of cooking foie gras. This one is really very simple. Although I still prefer the first version, this recipe has the advantage of baking itself without the sweat and  without an oven! And I must admit that I also like these artisanal looking slices…!
 

For this recipe, you need foie gras. For the seasoning and to remove the veins I invite you to see the beginning of the recipe of terrine of foie gras .
 
 
 
 
So we’re at the point where the foie gras is room temperature, salty, peppery and spicy. You can choose the recipe you want, I only explain here the cooking method.
For my part, on the pictures, I made a foie gras with rum and four spice mix with a good pinch of sugar on each side.
Simply place the liver on a piece of cling film as shown in the photo below.
 
 
It  must realize 2 turns with the roll of stretch film then tear it to wrap it well.
 
 
Wrap the foie gras with the film but this time in the other direction, still with two turns.
 
 
Just do this 10 times, 5 times in one direction and 5 times in the other. We then obtain a “pudding” of liver.
 
 
It is now enough to boil 1 liter of water per 100g of liver. For example if the liver weighs 500g I will boil 5 liters of water. The liver on the picture weighed 650g so I boiled 6,5l of water.
 
 
Once the water is boiling, turn off the heat (and remove from the stove if you are cooking on an electric stove, as these plates stay hot for a long time) and plunge the foie gras into the water.
 
 
The most delicate operation is probably to submerge the liver in boiling water! All means are good to get there!
 
 
Now we leave the foie gras submerged by itself and we only have to recover the foie gras when the water has come down to room temperature. This may take some time. Wipe the foie gras well and put it in the refrigerator at least 5 days before eating it.
