Makis inversés avocats, saumon et sauce Samouraï

J’avais dégusté ces makis inversés dans un restaurant « fusion » à Santiago au Chili avec deux amies. Bien que pas très traditionnels, ils étaient vraiment délicieux. Je vous avais proposé sur le blog, des makis japonais saumon piment et des gimbaps coréens au poulet. Deux techniques similaires, mais avec un riz vinaigré pour les premiers et un riz à l’huile de sésame pour les seconds. Comme nous sommes ici clairement sur la « fusion food », j’ai voulu tester un riz à la fois vinaigré (en moindres proportions) et à la fois à l’huile de sésame. Le résultat est pour moi parfait. Ici avec des crevettes croustillantes et du saumon cuit et du saumon fumé, les makis sont riches certes, mais décadents et appétissants à souhait.

  • Préparez tout d’abord le riz rond. Le riz à sushi est un riz rond, et franchement vous ne verrez aucune différence. Et comme le riz rond ets moins cher… Rincez-le à l’eau claire pendant 2 minutes puis égouttez-le. Versez-le dans le rice cooker puis ajoutez les 425g d’eau pour une cuisson parfaite. Vous pourrez aussi faire la même chose dans une casserole avec un couvercle sur feu doux jusqu’à complète absorption de l’eau.
  • Pendant ce temps, faire cuire 7 minutes le pavé de saumon à l’eau bouillante. J’ai pris ici un saumon sous vide qui fait parfaitement l’affaire.
  • Pendant la cuisson de tout cela, faites la sauce samouraï. Versez le jaune d’œuf, la moutarde et un peu des 160g d’huile dans un bol.
  • Fouettez à grande vitesse en ajoutant le reste d’huile en filet pour faire une mayonnaise.
  • Ajoutez le ketchup.
  • La crème de piment (ou tabasco) et la crème.
  • Terminez avec le curcuma, un peu de piment en poudre et du sel à votre goût.
  • La sauce est prête.
  • Quand le saumon est cuit, émiettez-le à la fourchette puis ajoutez deux cuillerées à café de sauce.
  • Mélangez bien et laissez de côté.
  • Quand le riz ets cuit, versez-le dans un récipient puis ajoutez l’huile de sésame en mélangeant délicatement. Dans un petit bol, mélangez le sel, le sucre, le mirin et le vinaigre. Versez dans le riz et mélangez.
  • Pendant que le riz tiédit, faites réchauffez les crevettes croustillantes au four à 150°C pendant 10 minutes. Coupez l’avocat en 4 quartiers, puis chaque quartier en 3.
  • Pour les feuilles, coupez pour qu’elles fassent 20cm de côté sur 15.
  • Versez 150g de riz cuit et tiédi. Vous remarquerez que j’utilise cette fois une natte en bambou enveloppée de film étirable.
  • Étalez-le sur toute la surface.
  • Retournez la feuille délicatement puis pressez à nouveau. Le riz est contre le film étirable. Versez deux cuillerées à café de saumon cuit, deux tranches d’avocat.
  • Posez aussi deux crevettes croustillantes.
  • Commencez à enrouler en serrant bien et en vous aidant au besoin de la natte.
  • Et voilà !
  • Faites de même pour les 4 autres rouleaux. Enveloppez le dessus d’une ou deux tranches de saumon fumé.
  • Puis avec un très bon couteau, coupez chaque rouleau en deux, puis chaque moitié en cinq.
  • À déguster sans attendre avec de la sauce soja et la sauce samouraï !

I had tasted these inverted makis in a “fusion” restaurant in Santiago, Chile with two friends. Although not very traditional, they were really delicious. I had proposed you on the blog, Japanese makis with chilli salmon (recipe HERE) and Korean gimbaps with chicken (recipe THERE). Two similar techniques, but with vinegar rice for the first and sesame oil rice for the second. As we are clearly on the “fusion food” here, I wanted to test a rice both vinegared (in lesser proportions) and with sesame oil. The result is perfect for me. Here with crispy shrimp and cooked and smoked salmon, the makis are rich but decadent and appetizing.

Recette pour 5 rouleaux de makis (pour 4 personnes) :

Rice:

  • 340g of round rice
  • 425g of water
  • 10g sesame oil
  • 5g of salt
  • 15g of sugar
  • 5g of mirin
  • 20g of white vinegar

Samurai sauce:

  • 1 egg yolk
  • 25g of mustard
  • 160g of oil
  • 50g of ketchup
  • 5g of chili paste or tabasco
  • 50g of cream
  • 1 teaspoon turmeric powder
  • salt, chili powder

For the rest :

  • 1 salmon steak
  • 1 lawyer
  • 5 sheets of nori for maki
  • 10 crispy shrimp (see my recipe HERE)
  • 5 to 10 slices of smoked salmon (depending on their size!)

Instructions : 

First, prepare the round rice. Sushi rice is a round rice, and frankly you will not see any difference. And as the round rice is cheaper… Rinse it with clean water for 2 minutes and then drain it. Pour it into the rice cooker and add the 425g of water for perfect cooking. You can also do the same thing in a saucepan with a lid over low heat until the water is completely absorbed.

 

Meanwhile, cook the salmon steak in boiling water for 7 minutes. I took a vacuum-packed salmon here that does the job perfectly.

While all this is cooking, make the samurai sauce. Pour the egg yolk, mustard and a little of the 160g of oil into a bowl.

Whisk at high speed, adding the remaining oil in a stream to make a mayonnaise.

Add the ketchup.

The chili cream (or tabasco) and the cream.

Finish with turmeric, a little chili powder and salt to taste.

 

The sauce is ready.

When the salmon is cooked, flake it with a fork and add two teaspoons of sauce.

 

Mix well and set aside.

When the rice is cooked, pour it into a bowl and add the sesame oil, mixing gently. In a small bowl, combine salt, sugar, mirin and vinegar. Pour into the rice and mix.

While the rice is cooling, heat the crispy shrimp in the oven at 150°C for 10 minutes. Cut the avocado into 4 wedges, then each wedge into 3.

For the leaves, cut them so that they are 20cm by 15cm.

Pour 150g of cooked and warmed rice. You’ll notice that this time I’m using a bamboo mat wrapped in cling film.

Spread it over the entire surface.

Turn the sheet over gently and press again. The rice is against the stretch film. Add two teaspoons of cooked salmon and two slices of avocado.

Also place two crispy shrimp on top.

Start to roll up tightly, using the mat if necessary.

And There you go !

Do the same for the other 4 rolls. Wrap the top with one or two slices of smoked salmon.

Then with a very good knife, cut each roll in half, then each half into five.

To be enjoyed without delay with soy sauce and samurai sauce!

Avec les crevettes croustillantes cela fait penser aux ”dragons” que l’on peut retrouver dans certaines boutiques à sushi. hum… à tester de toute urgence 🙂 encore merci

Personnellement je ferai mon saumon à la vapeur, j’aime bien ce type de cuisson douce, ça change (et depuis que j’ai lu cet article j’essaie de réduire le plastique, mais ça n’est pas évident ????
