Tarte courgettes ricotta aneth

J’anticipe un peu sur la saison mais je suis tombé sur les courgettes dans la partie bio de mon marché de quartier. J’ai eu soudain envie de soleil dans l’assiette ! J’adore le mélange courgettes-ricotta et je voulais donc en faire une tarte salée. Avec de l’aneth et du parmesan on se retrouve avec une part délicieuse que l’on accompagnera volontiers de salade verte.

  • Commencez par préparer la pâte. Versez la farine, le sucre et le beurre coupé en morceaux dans la cuve de votre robot ou dans un récipient. 
  • Mélangez avec la feuille jusqu’à avoir une consistance sableuse (ou du bout des doigts sans robot ! ). 
  • Ajoutez alors l’œuf puis mélangez de nouveau jusqu’à avoir une pâte homogène.
  • Pas besoin de la mettre au frais. Prenez les 3/4 de la pâte (congelez le reste) et étalez-la légèrement farinée sur un papier de cuisson. 
  • Garnissez le moule à tarte. 
  • Coupez l’excédent de pâte. Placez au frais le temps de préparer la suite. 
  • Préférez des courgettes de taille moyenne pour cette recette. Au total j’ai utilisé 4 courgettes vertes et une jaune (j’ai pris la photo avant de savoir ce que j’allais vraiment utiliser). 
  • Râpez les 3 courgettes vertes.
  • Versez 6 cuillerée à soupe d’huile d’olive dans une large poêle avec les gousses d’ail épluchées et finement coupées. 
  • Faites chauffer sur feu modéré et ajoutez les courgettes.
  • Faites cuire une dizaine de minutes. Augmentez ensuite le feu pendant 3-4 minutes pour évaporer un peu plus de jus rendu. 
  • Dans un récipient, mélangez ensemble la ricotta, le parmesan et les œufs. Salez et poivrez à votre goût. Ajoutez un peu de noix de muscade. 
  • Hachez finement de l’aneth pour en avoir deux cuillerées à soupe que vous mettrez dans la migaine. 
  • Ajoutez les courgettes cuites et mélangez bien. 
  • Versez sur la pâte à tarte.
  • Étalez soigneusement.
  • Coupez en fines lamelles la courgette jaune et la courgette verte.
  • Puis disposez-les sur le dessus de la tarte.
  • Arrosez d’un peu d’huile d’olive supplémentaire, salez et poivrez, puis faites cuire 1h20 à 185°C. Démoulez tiède et dégustez avec une bonne salade verte !

I’m getting a little ahead of the season, but I came across zucchini in the organic section of my local market. I suddenly had a craving for sunshine on my plate! I love the zucchini-ricotta combo, so I wanted to make a savory pie out of it. With dill and parmesan cheese, this is a delicious slice that you can accompany with a green salad. 
 
 

Recipe for a 24cm diameter pie:

 
Dough: 
  • 400g flour
  • 270g of semi-salted butter
  • 20g of sugar
  • 1 egg
Migaine ricotta :
  • 6 tablespoons of olive oil
  • 3 zucchini 
  • 2 cloves of garlic
  • 350g of ricotta cheese
  • 60g of grated parmesan cheese
  • 2 eggs
  • 2 tablespoons freshly chopped dill
  • salt, pepper, nutmeg
For the top: 
  • 1 yellow zucchini
  • 1 green zucchini

 

Instructions: 

Start by preparing the dough. Pour the flour, sugar and chopped butter into the bowl of your food processor or into a bowl. 
 
 
Mix with the sheet until you have a sandy consistency (or with your fingertips without a robot! ). 
 
 
Then add the egg and mix again until you have a homogeneous paste.
 
 
 
No need to put it in the fridge. Take 3/4 of the dough (freeze the rest) and roll it out lightly floured on a baking paper. 
 
 
Line the pie pan. 
 
 
Cut off excess dough. Place in a cool place to prepare the rest. 
 
 
Use medium-sized zucchini for this recipe. In total I used 4 green zucchini and one yellow (I took the picture before I knew what I was really going to use). 

 

Grate the 3 green zucchinis.

 

Pour 6 tablespoons of olive oil into a large frying pan with the peeled and finely chopped garlic cloves. 

 

Heat over moderate heat and add the zucchini.

 

Cook for about ten minutes. Then increase the heat for 3-4 minutes to evaporate more of the rendered juice. 

 

 
 
In a bowl, mix together the ricotta, parmesan and eggs. Put salt and pepper at your taste. Add a little nutmeg. 

 

 
Finely chop the dill into two tablespoons and put them in the migaine. 

 

 

 

Add the cooked zucchini and mix well. 

 

 

Pour over pie crust.

Spread carefully.

Cut the yellow and green zucchini into thin strips.

 

Then arrange them on top of the pie.

 

 
 
Sprinkle with a little extra olive oil, season with salt and pepper, and bake for 1 hour and 20 minutes at 185°C. Turn out warm and enjoy with a good green salad!
