Kanelsnurrer

Pour Noël, je vous offre une des nombreuses recettes de mon nouveau livre, Scandaleusement Décadent, sorti chez Flammarion, les Kanelsnurrer. J’ai tout refait en pas à pas pour le blog, et la photo que vous voyez ici n’est pas celle du livre. Il faut tenter cette recette, juste pour l’odeur incroyablement délicieuse de la cuisson de ces kanelsnurrer, ces « tourbillons à la cannelle ». Car en plus de la cannelle de la garniture, la pâte contient aussi de la cardamome. C’est la version d’origine et scandinave des cinnamon buns. Malgré l’apparente complexité des motifs, la recette est en réalité très simple et rapide à faire. Il faut juste préparer la pâte suffisamment en avance pour la laisser reposer. Le petit tour de main pour faire les torsades n’a rien de complexe et le résultat obtenu est renversant : les kanelsnurrer sont moelleux et parfumés à souhait !

  • sirop simple (50g de sucre et 50g d’eau, le tout porté une fois à ébullition)

Instructions
 

  • Commencez par préparer la pâte la veille. Mettez dans la cuve d’un robot, tous les ingrédients sauf le beurre.
  • La cardamome va donner un goût incroyable à la pâte !
  • Mélangez avec le crochet pétrisseur pendant 5-6 minutes sur petite vitesse. La pâte ne doit plus coller sur le bord interne de la cuve.
  • Ajoutez alors tout le beurre en morceaux puis remettez en route pour 8 minutes, toujours sur petite vitesse. Au besoin, stoppez le robot, raclez avec une spatule le beurre qui ne se mélange pas, puis remettes en route. Au bout de ce temps rapide de pétrissage, la pâte doit être malgré tout assez lisse. Couvrez d’un torchon propre, puis laissez gonfler dans un endroit tiède pendant 1h30. La pâte doit doubler de volume. Dégazez-la avec la paume d’une main puis emballez-la dans du film étirable. Placez-la au frais une nuit entière, ou au moins 4-5 heures.
  • Pour la garniture, mélangez dans un bol le beurre demi-sel mou, les sucres et la cannelle.
  • Déballez la pâte froide et placez-la sur un plan de travail légèrement fariné. Étalez-la au rouleau en un rectangle d’environ 26 cm sur 42cm.
  • Tartinez la pâte avec la garniture, sur les ¾ de la surface : toute la largeur doit l’être, mais seulement les ¾ de la longueur. Essayez d’être le plus uniforme possible dans l’épaisseur de la garniture.
  • Pliez la pâte en trois dans la longueur. Vous avez maintenant une pâte pliée en trois, donc de 26 cm sur environ 14.
  • Coupez des bandes au couteau de 2cm de largeur sur 14cm.
  • Prenez une bande de pâte, étirez-la légèrement, puis torsadez-la pour qu’elle tourne environ 8 fois sur elle-même.
  • En étant droitier : prenez la bande de pâte torsadée de la main gauche et bloquez-la avec le pouce et le majeur. Enroulez-la deux fois entre l’index et le majeur de la main gauche à l’aide de la main droite. Insérez l’extrémité restante dans le centre du tourbillon obtenu.
  • Tout cela est en fait très simple à faire, donc pas d’inquiétude.
  • Posez chaque kanelsnurrer sur une plaque à pâtisserie garnie de papier sulfurisé. Recommencez ces opérations pour toutes les bandes de pâte. Laissez-les gonfler pendant environ 40 minutes : ils vont quasiment double de taille.
  • Vous pouvez vaporiser avec un peu d’eau pour qu’ils ne sèchent pas pendant la pousse.
  • Passez de l’œuf battu au pinceau puis mettez à cuire 15 minutes au four préchauffé sur chaleur tournante à 180°C.
  • Ils doivent être bien dorés. Passez ensuite tout de suite à la sortie du four, du sirop au pinceau pour avoir une jolie brillance. Pour le sirop simple : portez à ébullition 50g de sucre et 50g d’eau et c’est tout.
  • À déguster au goûter ou au petit déjeuner.

Because in addition to the cinnamon in the filling, the paste also contains cardamom. This is the original, Scandinavian version of cinnamon buns. Despite the apparent complexity of the designs, the recipe is actually very simple and quick to make. Just make the dough early enough to let it rest. The little trick to make the twists is not complicated and the result is amazing: the kanelsnurrer are soft and fragrant!

Pour une vingtaine de kanelsnurrer :

Dough:

  • 540g of T55 flour
  • 240g of semi-skimmed milk
  • 6g dry baker’s yeast
  • 85g of sugar
  • 4g of salt
  • 7,5g of ground cardamom
  • 50g of egg (1 egg)
  • 90g of soft butter in pieces

Trim:

  • 100g of soft semi-salted butter
  • 50g of sugar
  • 50g of brown vergeoise
  • 10g of cinnamon

For gilding :

  • one beaten egg

For the shine:

  • simple syrup (50g of sugar and 50g of water, all brought to a boil)

Instructions : 

Start by preparing the dough the day before. Put all the ingredients except the butter in a food processor.

The cardamom will give the dough an incredible taste!

Mix with the dough hook for 5-6 minutes on low speed. The dough should no longer stick to the inner edge of the bowl.

Then add all the butter in pieces and start again for 8 minutes, always on low speed. If necessary, stop the processor, scrape off any butter that doesn’t mix with a spatula, then start it again. After this quick kneading time, the dough should still be fairly smooth. Cover with a clean cloth, then let swell in a warm place for 1h30. The dough should double in volume. Degas it with the palm of one hand and wrap it in cling film. Place in the fridge overnight, or at least 4-5 hours.

 

For the filling, combine the soft semi-salted butter, sugars and cinnamon in a bowl.

Unwrap the cold dough and place it on a lightly floured work surface. Roll it out to a rectangle of about 26 cm by 42 cm.

Spread the dough with the filling, on ¾ of the surface: the whole width should be spread, but only ¾ of the length. Try to be as uniform as possible in the thickness of the filling.

Fold the dough lengthwise into thirds. You now have a dough folded in three, so 26 cm by about 14.

Cut 2cm wide by 14cm strips with a knife.

Take a strip of dough, stretch it slightly, then twist it so that it turns about 8 times on itself.

 

If you are right-handed: take the twisted strip of dough with your left hand and clamp it with your thumb and middle finger. Roll it twice between the index and middle fingers of your left hand using your right hand. Insert the remaining end into the center of the resulting vortex.

This is all actually very simple to do, so no worries.

Place each kanelsnurrer on a baking sheet lined with parchment paper. Repeat this process for all the dough strips. Let them swell for about 40 minutes: they will almost double in size.

You can spray with a little water so they don’t dry out during the growing process.

Brush with beaten egg and bake for 15 minutes in a preheated oven at 180°C.

They must be well browned. Then brush the syrup with a brush right after you take it out of the oven to get a nice shine. For the simple syrup: bring 50g of sugar and 50g of water to a boil and that’s it.

 

To be enjoyed as a snack or for breakfast.

INCROYABLEMENT bon, j’ai badigeonné le dessus de gelée de coings liquéfiée dès la sortie du four sinon j’ai rien changé. Ces brioches sont tellement parfumées et légères, l’une des meilleures recettes de ce blog!

Bonjour,
J’ai testé et approuvé cette recette. Elle est simple à réaliser sauf la partie “façonnage”, mais ça reste faisable sans trop de problème. Il faut peut-être étiré un peu plus chaque bande.
Je les ai congelées et ça reste très bon: on sent bien la cardamome et la cannelle.

Ce livre me paraît une bonne idée decadeau pour Noël! Je m’attaque à cette recette bien tentante. 7,5g de cardamome, ça me parait beaucoup… Broyez vous les cardamomes entières ou uniquement les graines?

Merci beaucoup pour cette recette que j’ai tenté ce week-end. Pour commencer il manque pas mal de photos sur cette page(à signaler à votre gestionnaire de site web).
J’ai une question pour la garniture : faut-il faire fondre un peu le beurre ? en effet je l’avais sous forme pommade et du coup j’ai eu un peu de mal à la tartiner et surtout la garniture avait tendance à s’échapper lors du façonnage, auriez-vous une astuce pour éviter cela ?
Avez-vous déjà essayé avec d’autre garnitures ?
