Sorbet Citron Vert et Gingembre

Voici un sorbet frais et léger pour finir le repas (ou faire une pause). J’avais goûté un sorbet similaire à Bangkok à l’heure de thé au « Salon des Auteurs » à L’Oriental (voir le reportage ICI). Il est proposé avant d’attaquer le plateau de petits gâteaux! Je vous propose ma version bien citronnée avec du gingembre frais qui ajoute du piquant à l’acidité du citron vert. En dessert avec quelques sablés, il sera parfait!

  • Pas de panique!!! Si vous n’avez pas de super neutrose, on peut faire comme souvent, en remplaçant par un ou deux blancs d’oeufs. Dans ce cas, ne pas tenir compte du super neutrose… Mais réaliser tout de même un sirop!Mettre le sucre et le super neutrose dans une casserole et bien mélanger. 
  • Ajouter l’eau froide.
  • Mettre à bouillir jusqu’à 104-105°C. 
  • Verser le sirop dans un récipient avec couvercle et laisser refroidir et maturer toute une nuit. Le lendemain, le sirop est bien épais et visqueux. C’ets grâce à lui que le sorbet aura une belle texture et ne fondera pas trop vite. 
  • Le lendemain, mettre le zeste de deux citrons verts dans un récipient.
  • Presser le jus des citrons. C’est le plus long et le plus fatiguant. 
  • Verser dans le contenant avec les zestes. 
  • Éplucher le gingembre. Avec une cuiller, c’est extrêmement simple! 
  • Puis en râper 3 ou 4 centimètres. Tout dépend de la force que l’on souhaite!
  • Ajouter le sirop de sucre épaissi et bien mélanger. Le sorbet est prêt!Si l’on n’a pas de super neutrose (qui est très utile!!), il suffit d’ajouter à ce moment deux blanc d’oeufs crus légèrement battus (pour les rendre liquide) et de bien mélanger. 
  • Mettre en sorbetière ou en turbine. 
  • En 20 minutes (tout dépend de la chaleur ambiante), le sorbet est pris. 
  • Mettre dans une boite à glace et stocker au moins 2 heures au congélateur avant de déguster.

Here is a fresh and light sorbet to finish the meal (or take a break). I had tasted a similar sorbet in Bangkok at tea time at the “Salon des Auteurs” at L’Oriental (see the report HERE). It is offered before attacking the tray of cupcakes! My version is very lemony, with fresh ginger adding a little zing to the acidity of the lime. As a dessert with some shortbread, it will be perfect!

Recipe for one liter of lime and ginger sorbet:

 
-400ml (or grams) of lime juice (about 12-13)
-3 centimeters of ginger root
-700g of special lemon sorbet syrup
 
Special lemon sorbet syrup:
-700g of sugar
-500g of water
-6g of ice stabilizer (super neutrose)
 
Don’t panic!!! If you don’t have super neutrose, you can do as often, by replacing with one or two egg whites. In this case, do not take into account the super neutrose… But still make a syrup!
Put the sugar and super neutrose in a saucepan and mix well. 
 
 
Add cold water. 

 

 
Boil to 104-105°C. 

 

 

 
Pour the syrup into a container with a lid and let it cool and mature overnight. 
The next day, the syrup is thick and viscous. It is thanks to him that the sorbet will have a beautiful texture and will not melt too quickly. 
 
 
The next day, put the zest of two limes in a container.
 

 

Squeeze the juice from the lemons. This is the longest and most tiring. 

 

 
Pour into container with zest. 
 

 

Peel the ginger. With a spoon, it is extremely simple! 

 

 
Then grate 3 or 4 centimeters of it. It all depends on the strength that you want!

 

 
Add the thickened sugar syrup and mix well. The sorbet is ready!
If you don’t have super neutrose (which is very useful!!), just add at this moment two raw egg whites slightly beaten (to make them liquid) and mix well. 
 
 
Put in an ice cream maker or turbine. 

 

 
In 20 minutes (depending on the ambient heat), the sorbet is set. 

 

 
Put in an ice cream box and store for at least 2 hours in the freezer before serving.
