Raspberry vanilla lemon tart

Tarte framboises vanille citron

Une petite merveille en bouche, c’est vraiment la sensation quand on croque dans une part de cette tarte. Une pâte croustillante à souhait, une crème d’amandes riche et moelleuse, une ganache tendre et fraiche à la vanille explosive et des framboises juteuses. Pour cette tarte, je vous donne ma recette de ganache merveilleuse à la vanille que j’ai mise au point il y a 7 ans et que j’avais publiée uniquement dans mon premier livre « mes desserts » (Flammarion 2014). Rien de compliqué ici et un visuel qui ravira vos convives pour le dessert en plein été !

Ingredients
  

Pâte sucrée (cela vous donnera de quoi faire 3 tartes) :

Crème d’amandes au citron :

Instructions
 

  • Préparez la pâte sucrée. Mettez tous les ingrédients sauf l’œuf dans un bol ou dans le bol du robot.
  • Battez avec la feuille du robot (c’est le K) jusqu’à incorporation du beurre. 
  • Ajoutez à ce moment les 50g d’œuf (en gros un œuf moyen !). 
  • Remettez en marche juste pour incorporer l’œuf battu mais pas plus!
  • Mettez la pâte dans un film étirable au frais pour au moins 2 heures.Beurrez le cercle généreusement. Posez-le sur un morceau de toile aérée (il faut en garder ou en acheter une seconde). Vous pouvez aussi ne pas mettre de toile aérée et faire une méthode classique comme expliqué ICI
  • Posez le morceau de toile coupée à la hauteur du cercle et faites-le adhérer contre le cercle grace au beurre. Placez le tout au frais pour figer le beurre. 
  • Étalez la pâte sur un morceau de papier sulfurisé sur une épaisseur de 3-4mm. Il y a assez de pâte pour plusieurs tartes. 
  • Placez la pâte sur le cercle lui-même posé sur un morceau de toile, elle-même posée sur une plaque. 
  • Faites bien adhérer la pâte sur la toile et le fond en faisant un angle droit parfait. Coupez l’excédent avec un couteau. Replacez le tout au frais pour au moins 30 minutes.
  • Je n’ai pas pris de plaque de cuisson, j’ai pris le fond d’un moule à manqué à bord amovible. Pourquoi? Car les plaques de cuisson ont une fâcheuse tendance à se tordre sous l’effet de la chaleur. Après le repos au frais, faites cuire le fond de pâte à 175°C pendant 18 minutes. Sortez le cercle du four, versez la crème d’amande au citron (il faut la sortir au moins 1 heure avant du réfrigérateur). Avec la chaleur elle va fondre et s’étaler. 
  • Pour la crème d’amande au citron : mélangez dans un bol, le beurre fondu, le sucre glace, la poudre d’amande et les 30g d’œuf. Ajoutez le zeste du citron. 
  • Remettez au four pour 20 minutes, toujours à 175°. Et hop !! Enlevez le cercle à tarte. On voit ci-dessous, le ruban de toile aérée qui commence à partir. 
  • Enlevez le ruban. La pâte est à nue.
  • Vous pouvez passer un coup de râpe microplane sur le dessus de la tarte pour la parfaire.Pour la ganache merveilleuse à la vanille, placez la couverture ivoire dans un récipient. J’ai pris ici la marque Valrhona.
  • Placez la crème et le beurre coupé en morceaux dans une petite casserole.
  • Ouvrez la gousse de vanille en deux et récupérez la vanilline que vous mettrez avec le beurre.
  • Ajoutez l’extrait de vanille liquide et faites chauffer sur feu doux.
  • Dès que les premières bulles de frémissement apparaissent, versez sur la couverture. 
  • Mélangez en commençant par le centre puis en élargissant jusqu’au bord.
  • Raclez bien les côtés avec une spatule pour avoir une ganache parfaite.
  • Versez-en les 2/3 sur la tarte.
  • Et le reste dans un plat. Filmez au contact.
  • Placez la tarte et le plat de ganache au frais au moins 3 heures. Vous verrez que le film plastique se retire comme une décalcomanie ! 
  • Mettez la ganache du plat dans une poche munie d’une douille large (14mm).
  • Faites quelques petits monticules de ganache par-ci par-là.
  • Posez les framboises sur la tarte entre les tas de ganache. Le fait d’avoir des monticules de ganache asymétriques, sera un avantage si vous avez des framboises très hétérogènes en taille. Mettez au frais de nouveau au moins 2 heures. Vous pourrez saupoudrer d’un peu de sucre glace ou de poudre d’or !

A little wonder in the mouth, that’s really the feeling when you bite into a piece of this pie. A crisp pastry, a rich and fluffy almond cream, a tender and fresh vanilla ganache and juicy raspberries. For this tart, I give you my wonderful vanilla ganache recipe that I developed 7 years ago and published only in my first book “mes desserts” (Flammarion 2014). Nothing complicated here and a visual that will delight your guests for dessert in the middle of summer!
 
 

For a 16cm lemon and vanilla raspberry pie: 

Sweet dough (this will give you enough to make 3 pies).

  • 210g of flour
  • 125g of cold soft butter
  • 35g of powdered sugar
  • 25g of almond powder
  • 50g of beaten egg
Lemon almond cream:
 
  • 50g almond powder
  • 50g of soft butter
  • 50g of powdered sugar
  • 30g of egg
  • zest of 1 untreated lemon
Wonderful vanilla ganache:
 
  • 75g of full cream
  • 75g of soft butter
  • 150g of ivory blanket 
  • 1 vanilla pod
  • 1 teaspoon liquid vanilla extract

 

  • 250g of fresh raspberries 

 

Instructions: 

Prepare the sweet dough. Place all ingredients except the egg in a bowl or in the bowl of a food processor.
 
 
Beat with the leaf of the robot (this is the K) until the butter is incorporated. 
 
 
 
At this point, add the 50g of egg (roughly one medium egg!). 
 
 
Turn on again just to incorporate the beaten egg but no more!
 
 
Put the dough in a cling film in a cool place for at least 2 hours.
Butter the circle generously. Place it on a piece of airy canvas (keep some or buy a second one). You can also do without the ventilated fabric and use the classic method as explained HERE

 

 
Place the cut piece of cloth at the height of the circle and stick it to the circle with the butter. Place in a cool place to set the butter. 

 

 
Roll out the dough on a piece of parchment paper to a thickness of 3-4mm. There is enough dough for several pies. 

 

 
Place the dough on the circle, which is itself placed on a piece of canvas, itself placed on a plate. 

 

Make sure to adhere the paste to the canvas and background at a perfect right angle. Trim excess with a knife. Place back in the fridge for at least 30 minutes.

 

I didn’t use a baking sheet, I used the bottom of a springform pan with a removable rim. Why is this? Because baking trays have an annoying tendency to bend under the effect of heat. 
After resting in a cool place, bake the pastry base at 175°C for 18 minutes. 
Take the circle out of the oven, pour in the lemon almond cream (take it out of the refrigerator at least 1 hour before). With the heat it will melt and spread. 

 

 
For the lemon almond cream: mix the melted butter, powdered sugar, almond powder and 30g of egg in a bowl. Add the lemon zest. 
 
 

 

 
Return to the oven for 20 minutes, still at 175°. And hop! Remove the pie ring. Below, you can see the ribbon of aerated fabric that is starting to leave. 

 

Remove the ribbon. The dough is bare.

You can run a microplane grater over the top of the pie to perfect it.
For the wonderful vanilla ganache, place the ivory couverture in a container. I have taken here the Valrhona brand.

Place the cream and chopped butter in a small saucepan.

Open the vanilla bean in half and collect the vanillin, which you will put with the butter.

Add liquid vanilla extract and heat over low heat.

 
As soon as the first bubbles of simmering appear, pour over the cover. 

 

 

Mix starting in the center and working your way to the edge.

Scrape down the sides with a spatula to get a perfect ganache.

Pour 2/3 of it on the pie.

 

And the rest in a dish. Film on contact.

 

Place the pie and ganache dish in the fridge for at least 3 hours. You will see that the plastic film can be removed like a decal! 

 

Put the ganache from the dish into a bag fitted with a large (14mm) tip.

Make a few small mounds of ganache here and there.

 
Place the raspberries on the pie between the piles of ganache. Having asymmetrical mounds of ganache will be an advantage if you have raspberries that are very heterogeneous in size. Chill again for at least 2 hours. You can sprinkle a little powdered sugar or gold dust on top!
