Pâte Feuilletée Inversée

La pâte feuilletée inversée cumule les avantages de tenue en cuisson. Alors pourquoi « inversée »?? Au lieu de mettre le beurre dans la détrempe, la matière grasse se trouve autour de la détrempe. La pâte feuilletée inversée est plus légère et friable et on peut la conserver jusqu’à quatre jours au frais sans qu’elle perde ses qualités de pousse. De plus, comme le beurre est à l’extérieur de la pâte, elle est moins sujette au dessèchement et le développement du feuilletage est régulier… Bref à essayer absolument!!

Pâton au beurre:

Instructions
 

  • Commencer par préparer la détrempe. Mettre la farine et le beurre dans un bol. J’ai mis le tout dans le bol du robot kitchenaid mais on peut tout à fait s’en passer! 
  • Sabler le tout. C’est à dire que dans un bol kitchenaid ou kenwood, il faut utiliser le « k » et mélanger jusqu’à ce que le beurre enrobe les particules de farine. Le tout ressemble à du sable. Si l’on a pas de machine, il faut sabler le mélange entre les paumes des mains, un peu comme pour un crumble fin.
  • Dissoudre le sel dans l’eau. Ajouter l’eau salée en une seule fois puis mélanger avec le « k » ou à la main juste pour homogénéiser le tout sans travailler plus longtemps la pâte. 
  • Le pâton de détrempe est prêt! Ouf, première étape terminée! La pâte est assez molle à ce stade et légèrement collante. 
  • Mettre la détrempe sur un film étirable en essayer de lui une forme rectangulaire de 2 ou 3 centimètres d’épaisseur. Laisser reposer au frais pendant la suite de la recette.
  • Préparer ensuite le pâton au beurre en mettant le beurre et la farine dans un bol. 
  • Mélanger à la main pour bien incorporer le beurre à la farine.
  • Le mélange doit être parfaitement homogène.
  • Emballer sous la même forme que la détrempe. Placer au réfrigérateur pour au moins 30 minutes.
  • Pour les étapes suivantes, il faut que les deux pâtes aient la même consistance. Il ne faut jamais trop fariner le plan de travail au risque de changer la texture finale. Étaler le pâton au beurre de sorte qu’il ait deux fois la taille de la détrempe. 
  • Placer la détrempe sur le pâton au beurre comme sur la photo ci dessous.
  • Refermer le pâton sur la détrempe.
  • Étaler la pâte sur quatre fois sa taille de départ sur sa longueur.  
  • Rabattre les côtés vers le milieu.
  • Puis replier en deux.
  • Nous avons déjà effectué un premier tour double. Placer la pâte sous un film étirable et mettre au frais pour au moins 1 heure.
  • Étaler de nouveau en procédant de la même façon, dans le sens de la longueur, (la pâte a donc été tournée de 90° par rapport à l’étape précédente).
  • Plier de nouveau en  quatre.
  • Stocker de nouveau au frais pour 30 minutes. Le deuxième tour double est fait.
  • La pâte devient de plus en plus facile à travailler et on la sent plus douce et satinée au toucher.
  • Recommencer l’étalage mais sur trois fois sa longueur.
  • Et plier cette fois en trois. C’est le premier tour simple.
  • Stocker au frais puis recommencer de nouveau un tour simple.
  • Stocker au frais ou au congélateur ou utiliser immédiatement!!

After the classic puff pastry, we go crescendo in difficulty, but nothing unfeasible! The inverted puff pastry combines the advantages of baking. So why “reversed”? Instead of putting the butter in the tempera, the fat is around the tempera. Reverse puff pastry is lighter and more crumbly and can be stored for up to four days in the refrigerator without losing its growth qualities. Moreover, since the butter is on the outside of the dough, it is less prone to drying out and the development of the puff pastry is regular… In short, it’s a must try!

 Recipe for inverted puff pastry:

 
Distemper:
-250g of flour
-50g unsalted butter
-125g of water
-10g of salt
 
Butter pastry:
-400g of soft butter

-150g of flour

Start by preparing the tempera. Put the flour and butter in a bowl. I put it all in the bowl of the kitchenaid food processor but you can do without it! 

 
Sand the whole thing. That is, in a kitchenaid or kenwood bowl, use the “k” and mix until the butter coats the flour particles. The whole thing looks like sand. If you don’t have a machine, you have to sand the mixture between the palms of your hands, a bit like for a fine crumble.

 

 
Dissolve salt in water. 
Add the salt water in one go and mix with the “k” or by hand just to homogenize everything without working the dough any longer. 

 

 
The dough is ready! Phew, first step completed! The dough is quite soft at this stage and slightly sticky. 

 

 
Put the distemper on a stretch film and try to make it a rectangular shape of 2 or 3 centimeters thick. Let stand in a cool place for the rest of the recipe.
 
 

 

Then prepare the butter dough by putting the butter and flour in a bowl. 

 


Mix by hand to blend the butter into the flour.

 



The mixture must be perfectly homogeneous.



Pack in the same form as the distemper. 
Place in refrigerator for at least 30 minutes.


For the following steps, the two doughs must have the same consistency. 
Never over-flour the work surface as this will change the final texture. 
Roll out the butter dough so that it is twice the size of the tempera. 

 



Place the detrermpe on the butter dough as shown in the photo below.



Close the dough on the tempera.



Roll out the dough to four times its original size along its length.  



Fold the sides towards the middle.



Then fold in half.


We have already done a first double round. 

Place the dough under cling film and chill for at least 1 hour.



Roll out again in the same way, lengthwise (i.e. the dough has been turned 90° from the previous step).



Fold again into  four.



Store again in a cool place for 30 minutes. 
The second double round is done.



The dough becomes easier to work with and feels softer and more satiny to the touch.



Repeat the spreading process but on three times its length.



And fold this time in three. 
This is the first single round.



Store in a cool place and then repeat a single round.



Store in cool or freezer or use immediately!
