Riz sauté au poulet, cacahuètes et coriandre

Voici une recette vite réalisée ! Je l’ai faite lors d’un facebook live lors du confinement avec ce que j’avais sous la main. Le résultat est un délice grâce aux cacahuètes, à la coriandre et au poulet moelleux. Il faut simplement penser à cuire le riz la veille et le laisser reposer au frais une nuit pour qu’il se décolle bien. Vous pouvez bien spur adapter avec ce que vous avez sous la main !

  • Épluchez et coupez en lamelles l’oignon.
  • Épluchez la carotte et coupez-la en tranches.
  • Puis en bâtonnets.
  • Mettez 4 bonnes cuillerées à soupe d »huile (de tournesol ou de colza pour la cuisson) dans le wok (ou la pôele), ajoutez l’oignon, la carotte, les edamame (ou petits pois), l’ail écrasé au presse ail et râpez le gingembre.
  • Mettez à chauffer sur feu fort en remuant régulièrement.
  • Coupez le blanc de poulet en lamelles.
  • Quand l’oignon devient translucide, ajoutez le poulet.
  • Mélangez !
  • Quand le poulet est saisi, cassez les œufs dans un coin du wok (ici un seul, mais mettez-en bien 2).
  • Cassez-le dans le wok (ou la poêle).
  • Laissez-les cuire puis découpez-les en morceaux.
  • Mélangez avec le reste.
  • Ajoutez le riz cuit, salez et poivrez à votre goût, mettez une cuillerée à café de sucre et du nuoc mam (3/4 de cuillerée à soupe).
  • Mélangez bien puis ajoutez de la coriandre hachée, 3 ciboules hachées, des oignons frits (une poignée) et les cacahuètes.
  • Un dernier mélange et c’est prêt !!

Here is a quick recipe! I made it during a facebook live during the lockdown with what I had on hand. The result is a delight with peanuts, cilantro and moist chicken. Just remember to cook the rice the day before and let it sit in the fridge overnight so that it comes apart nicely. You can adapt with what you have at hand!

Recette RIZ SAUTÉ AU POULET, CACAHUÈTES ET CORIANDRE pour 4 personnes :

  • 200g of rice (weighed raw) then rinsed with clear water for 1 minute then cooked with 250g of water
  • 1 onion
  • 1 carrot
  • 125g of edamame or frozen peas
  • 3 cloves of garlic
  • 2cm of ginger
  • 1 large chicken breast
  • 2 eggs
  • salt, pepper, sugar
  • nuoc mam
  • 2 good handfuls of unsalted roasted peanuts
  • coriander, spring onion
  • fried onions

Instructions : 

Peel and slice the onion.

Peel and slice the carrot.

Then in sticks.

Put 4 tablespoons of oil (sunflower or rapeseed oil for cooking) in the wok (or pan), add the onion, the carrot, the edamame (or peas), the garlic crushed with a garlic press and grate the ginger.

Heat over high heat, stirring regularly.

Cut the chicken breast into strips.

When the onion becomes translucent, add the chicken.

Mix it up!

When the chicken is seared, break the eggs in a corner of the wok (here only one, but make sure to use 2).

Break it into the wok (or pan).

Let them cook and then cut them into pieces.

Mix with the rest.

Add the cooked rice, salt and pepper to taste, add a teaspoon of sugar and nuoc mam (3/4 of a tablespoon).

Mix well then add chopped coriander, 3 chopped chives, fried onions (a handful) and peanuts.

One last mix and it’s ready!

Merci pour la recette , la prochaine fois je vais en préparer plus car tout le monde a repris ! Je n’ai pas rajouté le coriandre ni la ciboule à cause de mes enfants et mon mari mais même sana ça s’était délicieux !!!!
