Looking for a nice salad and some green on your plate? I suggest my kale salad with edamame, avocado and pecans. I had eaten a similar one in New York and couldn’t wait to make it again. Here I make a delicious sauce with olive oil, balsamic vinegar, tahini and a sweet touch of agave syrup. It is therefore suitable for vegans. But above all it is a salad that will make a real meal. There’s a lot of talk about kale, and I hope it’s not just a fad, because I find it very hearty and filling. I had made you some ultra crispy kale chips in my book Vegemite and that I also proposed you in video in a facebook live of October 11, 2017  that you can find HERE

Recipe for KALE, EDAMAME AND AVOCADO SALAD for 4 people :

  • 500g of edamame (or peas or beans)
  • 600g of kale
  • 2 lawyers
  • 80g of pecan nuts
Sauce:
  • 3 tablespoons of tahini (sesame puree)
  • 1 clove of garlic
  • 1 tablespoon of agave syrup (or honey for non-vegans)
  • 1 tablespoon of balsamic vinegar
  • 6-7 tablespoons of olive oil
  • salt pepper

Instructions:

First, steam the edamame for 8-9 minutes. I already find them shelled in Asian supermarkets. You can use beans or peas and cook them in the same way.

As soon as they are cooked, rinse them with cold water to stop their cooking. This is kale.

Wash it with clean water and then wring it out. Then simply pull the large central rib.

Cut it into pieces with a knife.

In a large container, place the cabbage and edamame.

Add peeled and chopped avocados and chopped pecans.

For the sauce, put all the ingredients in a bowl (crushed garlic with a garlic press) and mix thoroughly.  Add salt and pepper to taste.

You can pour all the dressing into the salad and mix it as well as possible. Or like the picture, you can leave the sauce on the side!
