My book “Je fais mon chocolat maison” (I make my own chocolate) published by Solar and prefaced by Christophe Michalak came out in the middle of a confinement… It is currently unavailable on several bookstore platforms, but as of May 11, you will be able to order it from your usual bookstore. I give you all the first part (the technical part) in video (to be found in the menu “homemade chocolate” in the menu of the blog), the one which consists in making its chocolate from the bean to the bar, knowing that you will be able to make a lot of recipes of the book without necessarily making your chocolate yourself !

At the moment, I am trying to eat well (well, mostly good and varied!) despite the confinement, and with products that I can easily find around me. I love pajeon and bindae-tteok, two Korean pancakes. The first one is made with flour and the second one with yellow mung beans. I had given you a recipe for it a while ago (see HERE). I figured it must work with coral lentils too. This is the case and the result is delicious. With just chard and onions, the whole thing makes a crispy and fluffy pancake, naturally vegan and gluten-free, but above all easy to make with products that are easily found. You can of course use chard, chopped carrots, broccoli, corn etc. instead.

I have a new recipe for you, this time in partnership with Boursin® with garlic and fine herbs. This risotto is absolutely delicious and creamy with simple ingredients. I added some hazelnuts for the crunchy texture and zucchini, but you can put in another vegetable while you wait for zucchini to be in full season. A very easy recipe and especially very tasty!

Don’t blame me, but I couldn’t resist posting this delight to you during lockdown. I had talked about it several times in facebook live, and here is the promised recipe. So yes, you will surely miss the grué, because we don’t all have it in the cupboard, but you can replace it with roasted and chopped almonds or hazelnuts, even if the grué gives an incredible result and you can find beans quite easily in the organic stores. The result is ultra-crisp, moist and crunchy tarts with milk ganache and hazelnut praline…

This muesli cake is a real treat! It is however made without flour, sugar or fat. But with all the dried fruits it contains, it is very rich! It is perfect for breakfast or snack. I find it totally addictive, as it smells like bananas and the consistency is perfect. A big thank you to Dona Arlene, a Brazilian mother who lives in Agauí and whom I know well, for her recipe that I love and who agreed that I share it here with you. To my great pleasure because it is a cake that I will make often!

In this moment of confinement, I empty my freezer. I happened to have lamb mice in preparation for a recipe for my cooking blog. And a package of peeled beans from Picard (I’m not sponsored!) was also lying around nonchalantly. So I made this dish which was quite delicious, especially with a good homemade mashed potato. Moist meat and beans that cook in the juice with honey, rosemary and garlic!
